Chapulines, plural for chapulín (), are grasshoppers of the genus ''Sphenarium'' that are commonly eaten in certain areas of Mexico. The term is specific to Mexico and Central America, and derives from the Nahuatl word '' chapolin'' (singular) or '' chapolimeh'' (plural). They are collected only at certain times of year (from their hatching in early May through the late summer/early autumn). They are toasted on a comal. Often they are seasoned with garlic, lime juice, chilies and/or salt. The Caelifera are a suborder of orthopteran insects. They include the grasshoppers and grasshopper-like insects, as well as other superfamilies classified with them: the ground-hoppers (Tetrigoidea) and pygmy mole crickets (Tridactyloidea). Milpa is a crop-growing system used throughout Mesoamerica. It has been most extensively described in the Yucatán peninsula area of Mexico. The word ''milpa'' is derived from the Nahuatl word phrase ''mil-pa'', which translates into "cultivated field." Based on the ancient agricultural methods of Maya peoples and other Mesoamerican people, ''milpa'' agriculture produces maize, beans, and squash.
