Cheese Culture
A fermentation starter (called simply starter within the corresponding context, sometimes called a mother) is a preparation to assist the beginning of the fermentation process in preparation of various foods and alcoholic drinks. Food groups where they are used include breads, especially sourdough bread, and cheese. A starter culture is a microbiological culture which actually performs fermentation. These starters usually consist of a cultivation medium, such as grains, seeds, or nutrient liquids that have been well colonized by the microorganisms used for the fermentation. Mucor
''Mucor'' is a microbial genus of approximately 40 species of molds in the family Mucoraceae. Species are commonly found in soil, digestive systems, plant surfaces, some cheeses like Tomme de Savoie, rotten vegetable matter and iron oxide residue in the biosorption process. Description Colonies of this fungal genus are typically white to beige or grey and fast-growing. Colonies on culture medium may grow to several centimeters in height. Older colonies become grey to brown in color due to the development of spores. The species 'Mucor' belongs to the microbial kingdom: Fungi. Sodium carbonate, , (also known as washing soda, soda ash and soda crystals) is the inorganic compound with the formula Na2CO3 and its various hydrates. All forms are white, odourless, water-soluble salts that yield moderately alkaline solutions in water. Historically, it was extracted from the ashes of plants growing in sodium-rich soils. ''Pichia'' (''Hansenula'' and ''Hyphopichia'' are obsolete synonyms) is a genus of yeasts in the family Pichiaceae with spherical, elliptical, or oblong acuminate cells. ''Pichia'' is a teleomorph, and forms hat-shaped, hemispherical, or round ascospores during sexual reproduction. The anamorphs of some ''Pichia'' species are '' Candida'' species. The asexual reproduction is by multilateral budding.
