Arbutus Lodge
Arbutus Lodge was a restaurant and hotel in Cork in County Cork, Ireland. It was a fine dining restaurant that was yearly awarded one Michelin star in the periods 1974–1983, 1987 and 1988. The Egon Ronay Guide awarded the restaurant one star in the periods 1975–1978, 1983 and 1987. It was awarded two stars in the periods 1979-1981 and 1984–1985. In 1982 it was awarded the highest possible ranking of three stars. The Ryan family bought the estate Arbutus Lodge in 1961 and converted it into a hotel and restaurant. In 1971 the complex was opened. The restaurant quickly gained a reputation as one of the best restaurants in Ireland, which was confirmed by the international Michelin star. In 1999 they sold the hotel to the Carmody Group. Carmody's bankruptcy in 2002 also marked the definitive end of the 3-star hotel. Declan Ryan (chef)
Declan Ryan (Cork, 1943) is a former chef, manager and hotel-owner in Cork, Ireland. In the period 1971-1999 he and his family were owners of the Michelin star winning Arbutus Lodge. From 1999 he is owner of ''Arbutus Breads''. Declan Ryan earned Michelin stars in the periods 1974-1983 and 1986-1987 in Arbutus Lodge and in 1982 & 1983 in the Cashel Palace Hotel. Ryan studied hotel management at Hendon College of Technology in London. Later he trained in The Russell Hotel. Declan Ryan did a part of his chef training abroad, working in France with Paul Bocuse in Lyon and the Troisgros family in Roanne. Egon Ronay
Egon Miklos Ronay (24 July 1915 – 12 June 2010) was a Hungarian-born food critic who wrote and published a famous series of guides to British and Irish restaurants and hotels in the 1950s and 1960s. These guidebooks are credited with raising the quality of British cuisine offered in public eating places. Ronay also championed foreign cuisine for British diners. Early life Born in Budapest, Austria-Hungary, in 1915, he was the son of a prominent restaurateur. With the onset of World War II, he was conscripted into the Hungarian Army and served with the occupying forces after the First and Second Vienna Awards in southern Slovakia and northern Transylvania.
