Cadillac is an ''Appellation d'Origine Contrôlée'' (AOC) for sweet white wine from the Bordeaux wine region in France. It is located within the Entre-Deux-Mers subregion of Bordeaux. It takes its name from the town of Cadillac-sur-Garonne, formerly known as Cadillac. In 2008, the area under cultivation was , producing 6,000 hectolitres of wine. Guide Hachette Des Vins
The ''Guide Hachette des Vins'' is a French wine buying guide published by Hachette Livre (Hachette Pratique). Its first edition was released in 1985. It is France's best-selling wine guide and one of France's oldest. The Guide Hachette des Vins is considered to be France' most authoritative guide and commonly referred to as the bible of the French wine industry. Blind tasting panels The Guide Hachette uses blind tasting panels to evaluate wines by appellation. Each year 40,000 wines are tasted blind and rated by experts. No fee is required to submit samples. Only the most recently bottled vintage is allowed to be submitted for blind tasting. Wine tastings are organized locally in each region between January and May. Uncinula Necator
''Uncinula necator'' (syn. ''Erysiphe necator'') is a fungus that causes powdery mildew of grape. It is a common pathogen of Vitis species, including the wine grape, ''Vitis vinifera''. The fungus is believed to have originated in North America. European varieties of ''Vitis vinifera'' are more or less susceptible to this fungus. ''Uncinula necator'' infects all green tissue on the grapevine, including leaves and young berries. It can cause crop loss and poor wine quality if untreated. The sexual stage of this pathogen requires free moisture to release ascospores from its cleistothecia in the spring. Mildew
Mildew is a form of fungus. It is distinguished from its closely related counterpart, mould, largely by its colour: moulds appear in shades of black, blue, red, and green, whereas mildew is white. It appears as a thin, superficial growth consisting of minute hyphae ( fungal filaments) produced especially on living plants or organic matter such as wood, paper or leather. Both mould and mildew produce distinct offensive odours, and both have been identified as the cause of certain human ailments. In horticulture, mildew is either species of fungus in the order Erysiphales, or fungus-like organisms in the family '' Peronosporaceae''. It is also used more generally to mean mould growth. ''Botrytis cinerea'' is a necrotrophic fungus that affects many plant species, although its most notable hosts may be wine grapes. In viticulture, it is commonly known as "botrytis bunch rot"; in horticulture, it is usually called "grey mould" or "gray mold". The fungus gives rise to two different kinds of infections on grapes. The first, grey rot, is the result of consistently wet or humid conditions, and typically results in the loss of the affected bunches. The second, noble rot, occurs when drier conditions follow wetter, and can result in distinctive sweet dessert wines, such as Sauternes or the Aszú of Tokaji/ Grasă de Cotnari. Noble Rot
Noble rot (french: pourriture noble; german: Edelfäule; it, Muffa nobile; hu, Aszúsodás) is the beneficial form of a grey fungus, '' Botrytis cinerea'', affecting wine grapes. Infestation by ''Botrytis'' requires moist conditions. If the weather stays wet, the damaging form, "grey rot", can destroy crops of grapes. Grapes typically become infected with ''Botrytis'' when they are ripe. If they are then exposed to drier conditions and become partially raisined, this form of infection is known as noble rot. Grapes picked at a certain point during infestation can produce particularly fine and concentrated sweet wine. Wines produced by this method are known as botrytized wines.
