Zhájiàngmiàn
Zhajiangmian (; pinyin: Zhá jiàng miàn), literally "fried sauce noodles", commonly translated as "noodles served with fried bean sauce", is a Chinese dish consisting of thick wheat noodles topped with ''zhajiang'' sauce. Zhajiang sauce is normally made by simmering stir-fried diced meat or ground pork or beef with salty fermented soybean paste. ''Zhajiang'' also means "fried sauce" in Chinese. Even though the sauce itself is made by stir-frying, this homonym does not carry over into the Classical Chinese term. The topping of the noodles usually are sliced fresh or/and pickled vegetables, including cucumber, radish, and pickles edamame, depending on regions. Sichuan cuisine, alternatively romanized as Szechwan cuisine or Szechuan cuisine (, Standard Mandarin pronunciation: ), is a style of Chinese cuisine originating from Sichuan Province. Yellow soybean paste is a fermented paste made from yellow soybeans, salt, and water. Yellow soybean paste is produced in China and is used primarily in Beijing cuisine and other cuisines of northern China. Etymology In Chinese, the full name of the condiment is ''huángdòu jiàng'' (), but it is commonly referred to as just ''huáng jiàng'' ("yellow paste"). Li Lianying (; 12 November 1848 – 4 March 1911) was a Chinese imperial eunuch who lived in the late Qing dynasty. He was a eunuch during the regency of Empress Dowager Cixi, who was the ''de facto'' ruler of China from 1869 to 1908 throughout the reigns of the Tongzhi Emperor and Guangxu Emperor. Names Li's birth name was Li Yingtai (). He was renamed Li Jinxi () after entering the Forbidden City as a palace eunuch in 1856.
