Trisodium Citrate
Trisodium citrate has the chemical formula of Na3C6H5O7. It is sometimes referred to simply as "sodium citrate", though sodium citrate can refer to any of the three sodium salts of citric acid. It possesses a saline, mildly tart flavor, and is a mild alkali. Applications Foods Sodium citrate is chiefly used as a food additive, usually for flavor or as a preservative. Its E number is E331. Luis Agote (September 22, 1868 – November 12, 1954) was an Argentine physician and researcher. He was the first to perform a non-direct blood transfusion using sodium citrate as an anticoagulant. The procedure took place in Rawson hospital in the city of Buenos Aires on November 9, 1914. Agote was the first to perform this procedure in the Americas. Agote worked independently and separately from the Belgian surgeon Albert Hustin, who discovered that sodium citrate in tolerable quantities could anticoagulate blood for transfusion on March 27, 1914.
