__NOTOC__ Restaurant ''Spectrum'' (formerly Librije's Zusje) is a restaurant located in the Waldorf Astoria hotel in Amsterdam, Netherlands. It is a fine dining restaurant that is awarded two Michelin star since 2015. Head chef of ''Spectrum'' is Sidney Schutte. Schutte, a former chef of " De Librije" and Librije's Zusje in Zwolle, returned to the Netherlands from Hong Kong, where he worked in The Landmark Mandarin Oriental. On 1 May 2014, this second sister of ''De Librije'' opened for business. On 14 September 2014 it was announced that the first sister, ''Librije's Zusje'' in Zwolle, would close on 31 December 2014 and that ''De Librije'' would take over the location. Sidney Schutte is a Dutch Chef. He fulfils the position of Executive Chef at the Waldorf Astoria Amsterdam and its fine dining restauranSpectrum(formerly known aLibrije's Zusje Amsterdam. Jonnie Boer
Jonnie Boer (born January 9, 1965 in Giethoorn) is a Dutch Michelin star winning head chef and co-owner of the restaurant De Librije in Zwolle, Netherlands. Together with his wife and business partner Thérèse Boer he runs the 3-starred ''De Librije'' (in 16th century monastery library building) and ''Librije's Winkel'' (cooking shop) They also own ''Librije's Hotel'' and ''Librije's Atelier'' (cook- and wine school), all located in a former women prison. In 1989 Boer became head chef at De Librije. In 1992 he and his wife bought the restaurant. Michelin Guide, Michelin awarded the first star in 1993. De Librije () is a restaurant in Zwolle, Netherlands. It is a fine dining restaurant that has been awarded one or more Michelin stars since 1993. It carried one star in the period 1993–1998, two stars in the period 1999-2003 and three stars since 2004. In 2007 and 2008, the restaurant received a score of 19.5 and became Restaurant of the Year in the Dutch edition of Gault Millau. The restaurant was formerly located in the old library of a 15th-century Dominican abbey, hence the name "De Librije". In 2015, the establishment moved to replace its secondary location on the other side of the Thorbeckegracht which housed the "Librije's Zusje" (Librijes little sister) as part of the "Librije's Hotel".
