Jonnie Boer
Jonnie Boer (born January 9, 1965 in Giethoorn) is a Dutch Michelin star winning head chef and co-owner of the restaurant De Librije in Zwolle, Netherlands. Together with his wife and business partner Thérèse Boer he runs the 3-starred ''De Librije'' (in 16th century monastery library building) and ''Librije's Winkel'' (cooking shop) They also own ''Librije's Hotel'' and ''Librije's Atelier'' (cook- and wine school), all located in a former women prison. In 1989 Boer became head chef at De Librije. In 1992 he and his wife bought the restaurant. Michelin Guide, Michelin awarded the first star in 1993. Five years later Michelin awarded Jonnie Boer his second star. In 2004 Boer was awarded his third star. Jonnie Boer uses nature as his source of inspiration to develop new dishes, but also as basis of his cooking. Giethoorn
Giethoorn () is a village in the province of Overijssel, Netherlands with a population of 2,795 in 2020. It is located in the municipality of Steenwijkerland, about 5 km southwest of Steenwijk. As a popular Dutch tourist destination both within Netherlands and abroad, Giethoorn is often referred to as "Dutch Venice" ( nl, Hollands Venetië) or the "Venice of the Netherlands". History Giethoorn used to be a pedestrian precinct, but nowadays exceptions are made. It became locally famous, especially after 1958, when the Dutch film maker Bert Haanstra made his famous comedy ''Fanfare'' there. In the old part of the village, there were no roads (though a cycling path was eventually added), and all transport was done by water over one of the many canals. De Librije
De Librije () is a restaurant in Zwolle, Netherlands. It is a fine dining restaurant that has been awarded one or more Michelin stars since 1993. It carried one star in the period 1993–1998, two stars in the period 1999-2003 and three stars since 2004. In 2007 and 2008, the restaurant received a score of 19.5 and became Restaurant of the Year in the Dutch edition of Gault Millau. The restaurant was formerly located in the old library of a 15th-century Dominican abbey, hence the name "De Librije". In 2015, the establishment moved to replace its secondary location on the other side of the Thorbeckegracht which housed the "Librije's Zusje" (Librijes little sister) as part of the "Librije's Hotel". The chef de cuisine is Jonnie Boer and his wife Thérèse Boer-Tausch is maître and sommelier. The couple, who both already worked in the restaurant, bought the establishment in 1992. A chef is a trained professional cook and tradesman who is proficient in all aspects of food preparation, often focusing on a particular cuisine. Zwolle () is a city and municipality in the Northeastern Netherlands. It is the capital of the province of Overijssel and the province's second-largest municipality after Enschede with a population of 130,592 as of 1 December 2021. Zwolle is on the border with Gelderland, which follows the river IJssel, and is located about 50 km north east of Utrecht and 85 km south west of Groningen.
