Saison Des Idées Of The Parti Québécois
Saison (French, "season," ) is a pale ale that is highly carbonated, fruity, spicy, and often bottle conditioned. It was historically brewed with low alcohol levels, but modern productions of the style have moderate to high levels of alcohol. Along with several other varieties, it is generally classified as a farmhouse ale. History 'Bière de saison' is first mentioned in the early 19th century. It was most widely known as a beer from the industrial city of Liège, where it was brewed by professional breweries as a keepable version of the city's spelt beer that had been produced for a few centuries. It was made with malted spelt, unmalted wheat and only a small amount of barley malt. It was typically brewed in winter and drunk after four to six months. While Liège's saison disappeared after the First World War, it continued to be brewed, generally as a barley-only beer, by professional breweries in the province of Hainaut, who sold it as a 'cuvée réservée' luxury be ...

Saison Dupont
Dupont Brewery (in French: ''Brasserie Dupont'') is a brewery in Tourpes ( Leuze-en-Hainaut), in western Hainaut, Belgium. Founded in 1950, it is on a working farm which dates back to 1759 and has significant brewing history. In the 1990s, a bread bakery and cheese-making facility were added. Historically, their best-selling beer was the Moinette Blonde. However, the popularization of the Saison Dupont by their American importer in the 1980s led to great international popularity for this beer, which provides a link to the historic farmhouse ales of the region. Technical information The brewery's copper boiling kettles date from the 1920s, but there are also a number of pieces of modern equipment in use in the brewhouse. Square, flat-bottomed fermentation tanks of stainless steel are utilized to provide specific flavor characteristics that are evident in the finished beer. Primary fermentation lasts about 5 days, followed by a 1-2 week secondary fermentation. After this, the b ...

Fermentation
Fermentation is a metabolic process that produces chemical changes in organic substrates through the action of enzymes. In biochemistry, it is narrowly defined as the extraction of energy from carbohydrates in the absence of oxygen. In food production, it may more broadly refer to any process in which the activity of microorganisms brings about a desirable change to a foodstuff or beverage. The science of fermentation is known as zymology. In microorganisms, fermentation is the primary means of producing adenosine triphosphate (ATP) by the degradation of organic nutrients anaerobically. Humans have used fermentation to produce foodstuffs and beverages since the Neolithic age. For example, fermentation is used for preservation in a process that produces lactic acid found in such sour foods as pickled cucumbers, kombucha, kimchi, and yogurt, as well as for producing alcoholic beverages such as wine and beer. Fermentation also occurs within the gastrointestinal tracts of all a ...

Ester
In chemistry, an ester is a compound derived from an oxoacid (organic or inorganic) in which at least one hydroxyl group () is replaced by an alkoxy group (), as in the substitution reaction of a carboxylic acid and an alcohol. Glycerides are fatty acid esters of glycerol; they are important in biology, being one of the main classes of lipids and comprising the bulk of animal fats and vegetable oils. Esters typically have a pleasant smell; those of low molecular weight are commonly used as fragrances and are found in essential oils and pheromones. They perform as high-grade solvents for a broad array of plastics, plasticizers, resins, and lacquers, and are one of the largest classes of synthetic lubricants on the commercial market. Polyesters are important plastics, with monomers linked by ester moieties. Phosphoesters form the backbone of DNA molecules. Nitrate esters, such as nitroglycerin, are known for their explosive properties. '' Nomenclature Etymology Th ...

Pilsner
Pilsner (also pilsener or simply pils) is a type of pale lager. It takes its name from the Bohemian city of Plzeň (german: Pilsen), where the world's first pale lager (now known as Pilsner Urquell) was produced in 1842 by Pilsner Urquell Brewery. History Origin The city of Plzeň was granted brewing rights in 1307, but until the mid-1840s, most Bohemian beers were top-fermented. Originally called in german: Bürger-Brauerei Pilsen ( cs, Měšťanský pivovar Plzeň, en, Citizens' Brewery), it is now known as Pilsner Urquell Brewery. It was here they began to brew beer in the Bavarian style. Brewers had begun aging beer made with cool fermenting yeasts in caves (lager, i.e., german: gelagert tored, which improved the beer's clarity and shelf-life. Part of this research benefited from the knowledge already expounded on in a book (printed in German in 1794, in Czech in 1799), written by Czech brewer (german: Franz Andreas Paupie, links=no) (1753–1805) from Brno. The Plze ...

Malt
Malt is germinated cereal grain that has been dried in a process known as " malting". The grain is made to germinate by soaking in water and is then halted from germinating further by drying with hot air. Malted grain is used to make beer, whisky, malted milk, malt vinegar, confections such as Maltesers and Whoppers, flavored drinks such as Horlicks, Ovaltine, and Milo, and some baked goods, such as malt loaf, bagels, and Rich Tea biscuits. Malted grain that has been ground into a coarse meal is known as "sweet meal". Malting grain develops the enzymes (α-amylase, β-amylase) required for modifying the grains' starches into various types of sugar, including monosaccharide glucose, disaccharide maltose, trisaccharide maltotriose, and higher sugars called maltodextrines. It also develops other enzymes, such as proteases, that break down the proteins in the grain into forms that can be used by yeast. The point at which the malting process is stopped affects the starch-to-enz ...

French Language
French ( or ) is a Romance language of the Indo-European family. It descended from the Vulgar Latin of the Roman Empire, as did all Romance languages. French evolved from Gallo-Romance, the Latin spoken in Gaul, and more specifically in Northern Gaul. Its closest relatives are the other langues d'oïl—languages historically spoken in northern France and in southern Belgium, which French ( Francien) largely supplanted. French was also influenced by native Celtic languages of Northern Roman Gaul like Gallia Belgica and by the ( Germanic) Frankish language of the post-Roman Frankish invaders. Today, owing to France's past overseas expansion, there are numerous French-based creole languages, most notably Haitian Creole. A French-speaking person or nation may be referred to as Francophone in both English and French. French is an official language in 29 countries across multiple continents, most of which are members of the ''Organisation internationale de la Francophonie'' ...
