Mainland (cheese)
Mainland Cheese is a brand of cheese owned by Fonterra Co-operative Group that is sold throughout Australasia and parts of the Americas. It began as a family business in the South Island of New Zealand (which is jocularly known as the "mainland" of New Zealand because it is larger than the North Island). Company history Mainland Products Ltd was founded in 1954 by Peter McConnon. It grew rapidly, encompassing fresh and processed milk, cheese (with which the company's name is most associated today) as well as ice cream ( Tip Top), processed meats (Kiwi Huttons) and other consumer foods. Kiwi Co-operative Dairies led by CEO Craig Norgate acquired 83% of the business in the 1990s. The balance was acquired by Fonterra (formed by a 2001 merger which included Kiwi Co-op), also led by Norgate, in 2002. Cheddar Cheese
Cheddar cheese (or simply cheddar) is a natural cheese that is relatively hard, off-white (or orange if colourings such as annatto are added), and sometimes sharp-tasting. Cheddar originates from the English village of Cheddar in Somerset. Cheddar cheese is produced all over the world, and ''cheddar cheese'' has no protected designation of origin either in the United Kingdom or the European Union. In 2007, the protected designation of origin name "West Country Farmhouse Cheddar" was registered in the EU and (after Brexit) the UK, defined as cheddar produced from local milk within Somerset, Dorset, Devon and Cornwall and manufactured using traditional methods. Cheese
Cheese is a dairy product produced in wide ranges of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, milk is usually acidified and the enzymes of either rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout. Michael Craig Norgate (14 April 1965 – 7 July 2015) was a New Zealand accountant and business leader in agricultural processing, marketing and related areas. He had a career as chief executive officer (CEO) of dairy companies Kiwi Co-operative Dairies and Fonterra Co-operative Group, before consolidating the rural servicing industry through PGG Wrightson.
