A buttero (, plural butteri) or cavalcante is a mounted herder, usually of horses, of cattle, or of buffaloes, in Italy, predominantly in the Maremma region of Tuscany and northern Lazio, or in the Pontine Marshes to the south. History The buttero habitually rides a horse of one of the working breeds of the Maremma and the Roman Campagna – the Cavallo Romano della Maremma Laziale, the Maremmano, and the Tolfetano. He tends livestock, usually cattle (such as the native Maremmana breed), horses or buffaloes. Two saddles are in common use: the ''scafarda'' is the standard saddle in the Tuscan Maremma, while in Lazio the ''bardella'' is the saddle of choice; and older saddle, the ''sella col pallino'', is no longer in common use. The Ark of Taste is an international catalogue of endangered heritage foods which is maintained by the global Slow Food movement. The Ark is designed to preserve at-risk foods that are sustainably produced, unique in taste, and part of a distinct ecoregion. Contrary to the most literal definition of plant and animal conservation, the Ark of Taste aims to maintain edibles in its purview by actively encouraging their cultivation for consumption. Slow Food is an organization that promotes local food and traditional cooking. It was founded by Carlo Petrini in Italy in 1986 and has since spread worldwide. Monte Amiata
Mount Amiata is the largest of the lava domes in the Amiata lava dome complex located about 20 km northwest of Lake Bolsena in the southern Tuscany region of Italy. The Battle For Land, started in 1928 in Italy by Benito Mussolini, aimed to clear marshland and make it suitable for farming, as well as reclaiming land and reducing health risks. Aims The primary aims of the Battle for Land was to increase the amount of land available for cereal production, to help with the Battle for Grain.
