Joannès Rivière
Joannès "Jo" Rivière is a French chef, restaurateur and cookbook author specializing in Cambodian cuisine. He has been regarded as the leading Western authority on Cambodian food. Biography Rivière was born and grew up in Roanne, France. He recalls his Christmas family dinners being a mix of French and Southeast Asian dishes, such as larp, which was introduced by his uncle who had worked as a pilot in Cambodia in the 1970s. Rivière learned cooking while working in his family restaurant. After graduating from a culinary school in France Rivière worked as a pastry chef in Nantucket and Philadelphia in the United States for two years. Having to do military service, Rivière opted for civic service instead and moved to Cambodia in August 2003 to work as a volunteer culinary teacher and restaurant manager for the non-profit Sala Baï Hotel and Restaurant School in Siem Reap. Roanne (; frp, Rouana; oc, Roana) is a commune in the Loire department, central France. It is located northwest of Lyon on the river Loire. Wat Domnak is a famous Buddhist pagoda and one of the teaching monasteries in the city of Siem Reap, Cambodia. Etymology The name of Wat Domnak commemorates the fact that this pagoda was a former residence (''Damnak'', in Khmer, ព្រះដំណាក់ ) of the monarchy of Cambodia. David Thompson is an Australian chef, restaurateur and cookery writer, known for his skill and expertise in Thai cuisine. Career Thompson made his name at ''Darley Street Thai'' in Sydney, which he opened in 1992 in Darley St, Newtown upon his return from living and working in Bangkok for several years. He then opened ''Sailors Thai'' in 1995, also in Sydney. A sous-chef is a chef who is second in command in a kitchen; the person ranking next after the head chef, usually the more hands on manager with regards to training staff and organising the kitchen. Duties and functions The sous-chef has many responsibilities, because the executive chef has a more overarching role. Sala Baï Hotel and Restaurant School ( km, សាលា​បណ្តុះ​បណ្តាល​ផ្នែក​សណ្ឋាគារ​​សាលា​បៃ) is a vocational training school established in 2002 by the French non-governmental organization Agir Pour le Cambodge.
