Icewine
Ice wine (or icewine; german: Eiswein) is a type of dessert wine produced from grapes that have been frozen while still on the vine. The sugars and other dissolved solids do not freeze, but the water does, allowing for a more concentrated grape juice to develop. The grapes' must is then pressed from the frozen grapes, resulting in a smaller amount of more concentrated, very sweet juice. With ice wines, the freezing happens before the fermentation, not afterwards. Unlike the grapes from which other dessert wines are made, such as Sauternes, Tokaji, or Trockenbeerenauslese, ice wine grapes should not be affected by ''Botrytis cinerea'' or noble rot, at least not to any great degree. Only healthy grapes keep in good shape until the opportunity arises for an ice wine harvest, which in extreme cases can occur after the New Year, on a northern hemisphere calendar. This gives ice wine its characteristic refreshing sweetness balanced by high acidity. When the grapes are free of ''Botry ... Donald Ziraldo
Donald J.P. Ziraldo is a Canadian winemaker and businessman, and a Member of the Order of Canada. He and his partner Karl J. Kaiser have often been cited as two of the most important figures in Canadian wine history. He and Kaiser have been credited with starting the first winery in Canada since Prohibition as founders of Inniskillin Winery in Niagara, Canada. Inniskillin winery In the spring of 1974, Ziraldo was determined to start a winery after he and Karl Kaiser, an Austrian-born wine-maker who had immigrated to Canada a few years earlier, found the wines in Ontario to be "undrinkable". Ziraldo got permission to obtain a winery license from Major-General George Kitching, who was the chairman of the Liquor Licensing Board of Ontario. Along with Kaiser, they worked together for 30 years to establish Inniskillin and put Canadian wines, which were virtually unknown at the time, on the world wine map. Their most well-known accomplishment was winning the coveted ''Grand prix d'hon ... [...More Info...]       [...Related Items...]     OR:     [Wikipedia]   [Google]   [Baidu]   |

Vidal Blanc
Vidal blanc (or simply Vidal) is a white hybrid grape variety produced from the ''Vitis vinifera'' variety Ugni blanc (also known as Trebbiano Toscano) and another hybrid variety, Rayon d'Or (Seibel 4986). It is a very winter-hardy variety that manages to produce high sugar levels in cold climates with moderate to high acidity.J. Robinson, J. Harding and J. Vouillamoz ''Wine Grapes - A complete guide to 1,368 vine varieties, including their origins and flavours'' pgs 851, 875 & 1136-1135 Allen Lane 2012 The grape was developed in the 1930s by French wine grape breeder Jean Louis Vidal; his primary goal in developing the variety was for the production of Cognac in the Charente-Maritime region of western France. However, due to its winter hardiness this grape variety is cultivated most extensively in the Canadian wine regions of Ontario, British Columbia, Quebec and Nova Scotia where it is often used for ice wine production as a permitted grape of the Vintners Quality Allian ... First Nations In Canada
First Nations (french: Premières Nations) is a term used to identify those Indigenous Canadian peoples who are neither Inuit nor Métis. Traditionally, First Nations in Canada were peoples who lived south of the tree line, and mainly south of the Arctic Circle. There are 634 recognized First Nations governments or bands across Canada. Roughly half are located in the provinces of Ontario and British Columbia. Under Charter jurisprudence, First Nations are a "designated group," along with women, visible minorities, and people with physical or mental disabilities. First Nations are not defined as a visible minority by the criteria of Statistics Canada. North American indigenous peoples have cultures spanning thousands of years. Vintners Quality Alliance
Vintners Quality Alliance, or VQA, is a regulatory and appellation system which guarantees the high quality and authenticity of origin for Canadian wines made under that system in British Columbia and Ontario. It is similar to regulatory systems in France (AOC), Spain ( DO), Italy (DOC), and Germany ( QmP). The VQA system allows for sub-appellations, by which the grapes for wines are sourced from extremely specific geographical locations with different soil and climate. This is in accordance with the concept of ''terroir''.J. Robinson (ed) ''"The Oxford Companion to Wine"'' Third Edition pg 759 Oxford University Press 2006 In addition, there are other classifications of wine in Canada. British Columbia has a category known as ''"Wines of Distinction"'', Nova Scotia has ''"Wines of Nova Scotia"'' and Quebec has "''Vins du Québec''". All must be 100 percent made from grapes grown in British Columbia, Nova Scotia or Quebec, respectively. Cellared in Canada is a completely separate ...
