History Of Sherry
The history of Sherry is closely linked with that of Spanish wine production, particularly the political fortunes of the Cádiz region, where it originated with the early Phoenician settlement of the Iberian Peninsula. The triangular region between the towns of Jerez de la Frontera, El Puerto de Santa María, and Sanlúcar de Barrameda still marks the limits of the modern ''denominación''. One of the world's oldest wines, its considerable evolution has been marked by the influence of many of the world's greatest empires and civilizations: the Phoenicians, Greeks, Romans, Moors, Spanish and British. Must (from the Latin ''vinum mustum'', "young wine") is freshly crushed fruit juice (usually grape juice) that contains the skins, seeds, and stems of the fruit. The solid portion of the must is called pomace and typically makes up 7–23% of the total weight of the must. Making must is the first step in winemaking. Lucius Junius Moderatus Columella (; Arabic: , 4 – ) was a prominent writer on agriculture in the Roman Empire. Mago ( xpu, 𐤌𐤂‬𐤍‬, ) was a Carthaginian writer, author of an agricultural manual in Punic which was a record of the farming knowledge of Carthage, The Punic text has been lost, but some fragments of Greek and Latin translations survive. Work Mago's long work was divided into 28 books. It incorporated local Berber and Punic traditional practices. Fermentation (wine)
The process of fermentation in winemaking turns grape juice into an alcoholic beverage. During fermentation, yeasts transform sugars present in the juice into ethanol and carbon dioxide (as a by-product). In winemaking, the temperature and speed of fermentation are important considerations as well as the levels of oxygen present in the must at the start of the fermentation.
