Flan (pie)
A flan, in British cuisine, is an egg-based dish with an open, rimmed pastry or sponge base containing a sweet or savoury filling. Examples are bacon and egg flan and custard tart. History Flan is recorded in Ancient Roman cuisine. It was often a savory dish, as in " eel flan"; sweet flans were also enjoyed. In the Middle Ages, both sweet and savory flans ( almonds, cinnamon and sugar; cheese, curd, spinach, fish) were popular in Spain and across Europe, especially during Lent, when meat was forbidden. Crème caramel (), flan, caramel pudding, condensed milk pudding, or caramel custard is a custard dessert with a layer of clear caramel sauce. History Custard has a long documented history, but crème caramel or flan in its modern form, with soft caramel on top, and prepared and cooked using a bain-marie, is first documented in by Jean-Baptiste Reboul, Jean Baptiste Reboul published in 1897. Curd
Curd is obtained by Denaturation (biochemistry), coagulating milk in a sequential process called curdling. It can be a final dairy product or the first stage in cheesemaking. The coagulation can be caused by adding rennet, a Kefir cheese, culture, or any edible acidic substance such as lemon juice or vinegar, and then allowing it to coagulate. The increased acidity causes the milk proteins (casein) to tangle into solid masses, or ''curds''. Milk that has been left to sour (raw milk alone or pasteurized milk with added lactic acid bacteria) will also naturally produce curds, and sour milk cheeses are produced this way. Flaó
Flaó (plural flaons, ) is a cheesecake or tart found in Spanish cuisine popular from Levante. It is claimed by Majorca, Ibiza and Formentera, with some controversy. Traditionally flaons were part of Easter family celebrations in Menorca, but now they are available all year round. In some regions flaons are a type of crescent-shaped pie filled with jam and honey in Calasseit, Tarragona, or some type of cheese, varying according to the location. Honey was used traditionally, but in modern times sweet flaons are usually sweetened with sugar. Flan cake, also known as leche flan cake or crème caramel cake, is a Filipino chiffon or sponge cake (''mamón'') baked with a layer of leche flan (crème caramel) on top and drizzled with caramel syrup. It is sometimes known as "custard cake", which confuses it with yema cake. Modern versions of flan cake can be cooked with a variety of added ingredients.
