Knox had been studying design and technology to ensure he can become a permanent teacher and to also ensure his students are well taught. He has also done annual consultant rugby coaching in the United States from 2011 to 2016, with stints at Columbia University in New York City, SFGG in San Francisco and most recently at Morris Rugby & Drew University in New Jersey.
