A beef tenderloin (US English), known as an eye fillet in Australasia, filet in France, filé mignon in Brazil, and fillet in the United Kingdom and South Africa, is cut from the loin of beef. Description As with all quadrupeds, the tenderloin refers to the psoas major muscle ventral to the transverse processes of the lumbar vertebrae, near the kidneys. The tenderloin is an oblong shape spanning two primal cuts: the short loin (called the sirloin in Commonwealth countries) and the sirloin (called the rump in Commonwealth countries). The tenderloin sits beneath the ribs, next to the backbone. It has two ends: the butt and the "tail". The smaller, pointed end—the "tail"—starts a little past the ribs, growing in thickness until it ends in the "sirloin" primal cut, which is closer to the butt of the cow. Tournedos Rossini
Tournedos Rossini is a French steak dish, named after 19th-century composer Gioachino Rossini. Its invention is attributed to either French master chef Marie-Antoine Carême, Adolphe Dugléré, or Savoy Hotel chef Auguste Escoffier. The dish comprises a beef tournedos (filet mignon), pan-fried in butter, served on a crouton, and topped with a hot slice of fresh whole foie gras briefly pan-fried at the last minute. Tournedos-sur-Seine is a small village and a former commune in the Eure department in Normandy in northern France. On 1 January 2018, it was merged into the new commune of Porte-de-Seine.Arrêté préfectoral
6 December 2017 The village has approximately 25 houses, all of them situated in the banks of the river . The small town has a well known occurrence at sunset for the cliffs on the other side of the river to turn pink, and welcomes its own family of cormorants, swans and ducks, as well as other wildlife.
