''Street Food'' is an American documentary that premiered on Netflix on April 26, 2019, created by David Gelb and Brian McGinn, exploring street food around the world. Archival footage is combined with face-to-face interviews and follows street food chefs and their history, which is intertwined with the big picture of how influential street food is on their native country. Douhua () is a Chinese sweet or savoury snack made with very tender tofu. It is also referred to as doufuhua (), tofu pudding, soybean pudding or, particularly in northern China, tofu brains (). History Tofu is thought to have originated in ancient China during the Han Dynasty. Liu An, the grandson of Emperor Gaozu of Han, was ambitious and wanted to invent something to make people live forever. Chiayi turkey rice () is a bowl of rice with shredded turkey layered on top, often accompanied by pickled radish. Fish head casserole () is a seafood dish from Jiangsu province in China. It is named for its main ingredient, fish heads, which are cooked in a casserole. Ingredients The dish includes a fish head (about 1 kg), tofu, cayenne pepper, sesame oil, vegetable oil, garlic sprouts, shallot, ginger, soy, salt, cooking wine, white sugar and monosodium glutamate. Preparation The head is washed, marinated in soy sauce, and fried with added cooking wine. The head is stewed and served garnished with garlic sprouts and sesame oil. The broth in this dish has a milky white colour. This dish is famous because of its delicious taste and nutrition. This dish was famous only in China until 1982. Gudeg is a traditional Javanese dish from Yogyakarta and Central Java, Indonesia. Gudeg is made from young unripe jack fruit ( Javanese: ''gori'', Indonesian: '' nangka muda'') stewed for several hours with palm sugar, and coconut milk. Additional spices include garlic, shallot, candlenut, coriander seed, galangal, bay leaves, and teak leaves, the latter giving a reddish-brown color to the dish.
