Squacquerone Di Romagna
''Squacquerone'' is an Italian cheese soft and crumbly type, originally from Romagna. Description Squacquerone is a cow's milk cheese, made from whole milk, with a very short maturation. It is similar to ''crescenza'', although the paste (white in color) is less consistent due to the high water content. It is made of pasteurized or raw milk, and is extremely soft, creamy, and spreadable. The color is ivory white and the taste notes are typically lactic, with a sweet-sour taste. It is one of the main products with which '' piadina'' is stuffed. In addition to the common ''squacquerone'', the Squacquerone di Romagna PDO is widespread, produced only in the designated area and in compliance with the relative regulations. Etymology The etymology, of Romagna origin, refers to the consistency that "''squaglia''" ("melts") due to the high presence of water. Protected Designation Of Origin
The protected designation of origin (PDO) is a type of geographical indication of the European Union and the United Kingdom aimed at preserving the designations of origin of food-related products. The designation was created in 1992 and its main purpose is to designate products that have been produced, processed and developed in a specific geographical area, using the recognized know-how of local producers and ingredients from the region concerned. The list below also shows other geographical indications. Features The characteristics of the products protected are essentially linked to their terroir. The European or UK PDO logo, of which the use is compulsory, documents this link. European Regulation 510/2006 of 20 March 2006 acknowledges a priority to establish a community protection system that ensures equal conditions of competition between producers. This European Regulation is intended to guarantee the reputation of regional products, adapt existing national protections t ...

Cheese
Cheese is a dairy product produced in wide ranges of flavors, textures, and forms by coagulation of the milk protein casein. It comprises proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. During production, milk is usually acidified and the enzymes of either rennet or bacterial enzymes with similar activity are added to cause the casein to coagulate. The solid curds are then separated from the liquid whey and pressed into finished cheese. Some cheeses have aromatic molds on the rind, the outer layer, or throughout. Over a thousand types of cheese exist and are produced in various countries. Their styles, textures and flavors depend on the origin of the milk (including the animal's diet), whether they have been pasteurized, the butterfat content, the bacteria and mold, the processing, and how long they have been aged. Herbs, spices, or wood smoke may be used as flavoring agents. The yellow to red color of many cheeses is produced by adding a ...

Romagna
Romagna ( rgn, Rumâgna) is an Italian historical region that approximately corresponds to the south-eastern portion of present-day Emilia-Romagna, North Italy. Traditionally, it is limited by the Apennines to the south-west, the Adriatic to the east, and the rivers Reno and Sillaro to the north and west. The region's major cities include Cesena, Faenza, Forlì, Imola, Ravenna, Rimini and City of San Marino (San Marino is a landlocked state inside the Romagna historical region). The region has been recently formally expanded with the transfer from the Marche region of nine comuni where the Romagnol language is spoken (Casteldelci, Maiolo, Novafeltria, Pennabilli, San Leo, Sant'Agata Feltria, Talamello, Montecopiolo, Sassofeltrio). Etymology The name ''Romagna'' originates from the Latin name ''Romania'', which originally was the generic name for "land inhabited by Romans", and first appeared on Latin documents in the 5th century. It later took on the more specific meaning of " ...

Crescenza
Stracchino (), also known as ''crescenza'' (), is a type of Italian cow's-milk cheese, typical of Lombardy, Piedmont, Veneto, and Liguria. It is eaten very young, has no rind and a very soft, creamy texture and normally a mild and delicate flavour. It is normally square in shape. The name of the cheese derives from the Lombard adjective ''strach'', meaning "tired". It is said that milk produced by tired cows coming down from the alpine pastures in the autumn is richer in fats and more acidic. These qualities were discovered, according to legend, in the milk of cows who were moved seasonally, up and down the Alps, to different pastures. The milk of such cows gives the cheese its characteristic flavours. Stracchino is usually eaten on its own but also as a filling for some kinds of bread: in Recco, on the Ligurian riviera east of Genoa, ''focaccia col formaggio'' ("cheese focaccia") or ''focaccia di Recco'' is typically filled with crescenza, while in Romagna and in parts of so ...

Piadina
''Piadina'' or ''piada'' is a thin Italian flatbread, typically prepared in the Romagna historical region (Forlì, Cesena, Ravenna and Rimini). It is usually made with white flour, lard or olive oil, salt and water. The dough was traditionally cooked on a terracotta dish (called ''teggia'' in Romagnol), although nowadays flat pans or electric griddles are commonly used. The ''piadina'' has been added to the list of the traditional regional food products of Italy of the Emilia-Romagna region. Origin The ''piadina'' is typical of the Apennines area of Forlì, Cesena and Rimini, and also of the Ravenna area and the rest of the Romagna region. It is also widespread in Montefeltro, Pesaro e Urbino province, Ferrara province and the Republic of San Marino. Etymology The etymology of the word "piadina" is uncertain; many think the term "piada" (piê, pièda, pìda) was borrowed from the Greek word for focaccia. Others think the term was borrowed from other languages because of t ...

Cow's-milk Cheeses
Milk is a white liquid food produced by the mammary glands of mammals. It is the primary source of nutrition for young mammals (including breastfed human infants) before they are able to digest solid food. Immune factors and immune-modulating components in milk contribute to milk immunity. Early-lactation milk, which is called colostrum, contains antibodies that strengthen the immune system, and thus reduces the risk of many diseases. Milk contains many nutrients, including protein and lactose. As an agricultural product, dairy milk is collected from farm animals. In 2011, dairy farms produced around of milk from 260 million dairy cows. India is the world's largest producer of milk and the leading exporter of skimmed milk powder, but it exports few other milk products. Because there is an ever-increasing demand for dairy products within India, it could eventually become a net importer of dairy products. New Zealand, Germany and the Netherlands are the largest exporters of mi ...
