Pleskavica
Pljeskavica ( sr-cyr, Пљескавица, ) is a Serbian grilled dish consisting of a spiced meat patty mixture of pork, beef and lamb. It is one of the national dishes of Serbia and is very popular in the neighbouring Balkan and former Yugoslavian countries of Bosnia and Herzegovina, Croatia, and Montenegro. It is a main course served with onions, kajmak (milk cream), ajvar (relish), and urnebes (spicy cheese salad), either on plate with side dishes, or with ''lepinja'' (flatbread, as a type of hamburger). Recently, pljeskavica has gained popularity elsewhere in Europe and is served in a few speciality fast food restaurants in Germany, Sweden, and Austria. Kajmak
Kaymak, sarshir, or qashta/ashta ( fa, سَرشیر ) ( ar, قشطة or ar, قيمر ) is a creamy dairy food similar to clotted cream, made from the milk of water buffalo, cows, sheep, or goats in Central Asia, some Balkan countries, some Caucasus countries, the countries of the Levant, Turkic regions, Iran and Iraq. In Poland, the name refers to a confection similar to dulce de leche instead. The traditional method of making kaymak is to boil the raw milk slowly, then simmer it for two hours over a very low heat. After the heat source is shut off, the cream is skimmed and left to chill (and mildly ferment) for several hours or days. Kaymak has a high percentage of milk fat, typically about 60%. It has a thick, creamy consistency (not entirely compact, because of milk protein fibers) and a rich taste. Vranje ( sr-Cyrl, Врање, ) is a city in Southern Serbia and the administrative center of the Pčinja District. The municipality of Vranje has a population of 83,524 and its urban area has 60,485 inhabitants. Vranje is the economical, political and cultural centre of the Pčinja District in Southern Serbia. A hajduk ( hu, hajdúk, plural of ) is a type of irregular infantry found in Central and parts of Southeast Europe from the late 16th to mid 19th centuries. They have reputations ranging from bandits to freedom fighters depending on time, place, and their enemies.
