Podhale (literally "below the mountain pastures") is Poland's southernmost region, sometimes referred to as the "Polish Highlands". The Podhale is located in the foothills of the Tatra mountains , Tatra range of the Carpathian mountains. Nowy Targ
Nowy Targ (Officially: ''Royal Free city of Nowy Targ'', Yiddish: ''Naymark'', Goral Dialect: ''Miasto'') is a town in southern Poland, in the Lesser Poland Voivodeship. It is located in the Orava-Nowy Targ Basin at the foot of the Gorce Mountains, at the confluence of the Czarny Dunajec and the Biały Dunajec. It is the seat of the Nowy Targ County and the rural Gmina Nowy Targ, as well as the Tatra Euroregion. With 33,293 inhabitants, Nowy Targ is the largest town and the historic capital of Podhale, as well as its main commercial, communication and industrial center. The Sanctuary of Our Lady of Ludźmierz in Ludźmierz, Poland is home to Our Lady of Ludźmierz, known as the Shepherdess of Podhale or in Polish ''Gaździna Podhala''. The cult of Our Lady of Ludźmierz is strongly identified with the Góral people who live in the surrounding Tatra Mountains. History Ludźmierz is the oldest Catholic parish in Podhale. Its history stretches back to the 13th century. In 1234 Teodor Gryfita began raising a simple wooden church with a shingled roof and three altars in Ludźmierz, after obtaining permission from the bishop of Kraków. To encourage settlement in the uninhabited area, Gryfita brought in Cistercian Monks from France, Italy and nearby Jędrzejów. A simple wooden monastery was erected soon after, along with a number of other buildings used in agriculture. Niedzica Castle
Niedzica Castle also known as Dunajec Castle ( lat, Castrum de Dunajecz, hu, Nedec Váralja / Nedec-Vár, german: Sub-Arx Unterschloss, sk, Nedecký hrad), is located in the southernmost part of Poland in Niedzica ( Nowy Targ County in Lesser Poland). It was erected between the years 1320 and 1326 by Kokos of Brezovica on the site of an ancient stronghold surrounded by earthen walls in the Pieniny mountains. The Tatra Shepherd Dog, pl, Polski Owczarek Podhalański, italic=no, is a Polish breed of large flock guardian dog originating in the Tatra Mountains of the Podhale region of southern Poland. Oscypek (pronounced , Polish plural: ''oscypki''), rarely Oszczypek, is a smoked cheese made of salted sheep milk exclusively in the Tatra Mountains region of Poland. Oscypek is made by an expert named "baca", a term also denoting a shepherd in the mountains. The cheese is a traditional holiday cheese in some European countries and is often pan fried and served with cranberry jam (''żurawina'') on the side. Process and varieties A similar cheese is made in the Slovak Tatra Mountains under the name oštiepok.
