Pancit Buko
''Pancit buko'' ( Tagalog "young coconut noodles"; also known as ''pancit butong'' in Visayan), is a Filipino dish made from very thin strips of young coconut (''buko'') meat with various spices, vegetables, and meat or seafood. It is a type of Filipino noodle dish (''pancit''), even though it does not usually use actual noodles. The recipes can vary and are often adaptations of other Filipino ''pancit'' dishes. It has two main types, a broth version, and a stir-fried (''guisado'') version. The latter often uses ''latik'' and coconut oil derived from coconut cream (''kakang gata''). ''Pancit buko'' is commonly served directly on an opened coconut shell. The dish originates independently from the Tagalog people (specifically from Quezon and Laguna), and the Visayan people. ''Ginataan'' (pronounced: ), alternatively spelled ''guinataan'', is a Filipino term which refers to food cooked with ''gatâ'' (coconut milk). Literally translated, ''ginataan'' means "done with coconut milk". Due to the general nature of the term, it can refer to a number of different dishes, each called ''ginataan'', but distinct from one another. During the Spanish colonial era, the ''ginataan'' was brought to Mexico through the Manila galleons that docked in Acapulco. Batchoy, less commonly spelled batsoy, is a noodle soup made with pork offal, crushed pork cracklings, chicken stock, beef loin and round noodles. Its origins can be traced to the district of La Paz, Iloilo City in the Philippines, hence it is often referred to as La Paz Batchoy. Origin Batchoy's true origin is inconclusive. The Bisayan languages or Visayan languages are a subgroup of the Austronesian languages spoken in the languages of the Philippines, Philippines. They are most closely related to Tagalog language, Tagalog and the Bikol languages, all of which are part of the Central Philippine languages. Coconut milk is an opaque, milky-white liquid extracted from the grated pulp of mature coconuts. The opacity and rich taste of coconut milk are due to its high oil content, most of which is saturated fat.
