A pachade, also known as a farinette, is a thick and crispy pancake which is traditionally eaten in the French region of Auvergne Auvergne (; ; oc, label=Occitan, Auvèrnhe or ) is a former administrative region in central France, comprising the four departments of Allier, Puy-de-Dôme, Cantal and Haute-Loire. The recipe includes eggs, several tablespoons of wheat flour, salt and milk, mixed into a paste thicker than a typical pancake batter. Pachade may be sweet or savoury. A pancake (or hotcake, griddlecake, or flapjack) is a flat cake, often thin and round, prepared from a Starch, starch-based batter (cooking), batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter.
