Nicholas Restaurant
Nicholas Restaurant is a chain of three Lebanese restaurants in the Portland metropolitan area, in the United States. It is one of the oldest Lebanese and Middle Eastern restaurants in Portland. The business also operates in Gresham. History Nicholas and Linda Dibe opened the first restaurant in 1987. The Dibes fled Beirut, Lebanon in 1982, immigrated to Portland with their four young daughters. Five years later they opened the restaurant. Middle Eastern
The Middle East ( ar, الشرق الأوسط, ISO 233: ) is a geopolitical region commonly encompassing Arabia (including the Arabian Peninsula and Bahrain), Asia Minor (Asian part of Turkey except Hatay Province), East Thrace (European part of Turkey), Egypt, Iran, the Levant (including Ash-Shām and Cyprus), Mesopotamia (modern-day Iraq), and the Socotra Archipelago (a part of Yemen). The term came into widespread usage as a replacement of the term Near East (as opposed to the Far East) beginning in the early 20th century. The term "Middle East" has led to some confusion over its changing definitions, and has been viewed by some to be discriminatory or too Eurocentric. The region includes the vast majority of the territories included in the closely associated definition of Western Asia (including Iran), but without the South Caucasus, and additionally includes all of Egypt (not just the Sinai Region) and all of Turkey (not just the part barring East Thrace). Most Mid ...

Gresham, Oregon
Gresham ( ) is a city located in Multnomah County, Oregon, in the United States of America, immediately east of Portland, Oregon. It is considered a suburb within the Greater Portland Metropolitan area. Though it began as a settlement in the mid-1800s, it was not officially incorporated as a city until 1905; it was named after Walter Quintin Gresham, the American Civil War general and United States Secretary of State. The city's early economy was sustained largely by farming, and by the mid-20th century the city experienced a population boom, growing from 4,000 residents to over 10,000 between 1960 and 1970. The population was 105,594 at the 2010 census, making Gresham the fourth largest city in Oregon. History The area now known as Gresham was first settled in 1851 by brothers Jackson and James Powell, who claimed land under the Donation Land Claim Act of 1850. They were soon joined by other pioneer families, and the area came to be known as Powell's Valley. In 1884, a local ...

Pizza
Pizza (, ) is a dish of Italian origin consisting of a usually round, flat base of leavened wheat-based dough topped with tomatoes, cheese, and often various other ingredients (such as various types of sausage, anchovies, mushrooms, onions, olives, vegetables, meat, ham, etc.), which is then baked at a high temperature, traditionally in a wood-fired oven. A small pizza is sometimes called a pizzetta. A person who makes pizza is known as a pizzaiolo. In Italy, pizza served in a restaurant is presented unsliced, and is eaten with the use of a knife and fork. In casual settings, however, it is cut into wedges to be eaten while held in the hand. The term ''pizza'' was first recorded in the 10th century in a Latin manuscript from the Southern Italian town of Gaeta in Lazio, on the border with Campania. Modern pizza was invented in Naples, and the dish and its variants have since become popular in many countries. It has become one of the most popular foods in the world and a ...

Calzones
A calzone (, , ; "stocking" or "trouser") is an Italian oven-baked folded pizza, often described as a turnover, made with leavened dough. It originated in Naples in the 18th century. A typical calzone is made from salted bread dough, baked in an oven and is stuffed with salami, ham or vegetables, mozzarella, ricotta and Parmesan or pecorino cheese, as well as an egg.Gosetti (1967), p.785 Different regional variations in or on a calzone can often include other ingredients that are normally associated with pizza toppings. The term usually applies to an oven-baked turnover rather than a fried pastry (i.e. panzerotti), though ''calzoni'' and ''panzerotti'' are often mistaken for each other. A calzone is similar to a stromboli, an Italian-American pizza turnover, and the two are sometimes confused. Unlike strombolis, which are generally rolled or folded into a cylindrical or rectangular shape, calzones are always folded into a crescent shape, and typically do not contain tomato sauc ...
