Mahmous
Mahmous ( ar, محموص) an Arabic rice dish popular in Qatif and al-Hasa regions in Saudi Arabia, and Bahrain regions. Its primary ingredients are rice and onion. The dish may have originated before the rise of oil in Saudi Arabia when the people in Qatif were too poor to offer such dish with chicken, fish or meat so onion was used instead. And because of its black color and it can be prepared with relative ease with inexpensive ingredients, it is widely offered during Ashura to the audience to indicate a climate of grief during that period. Etymology ''Mahmous'', a contraction of ''tabkh al-hummous'', comes from the Arabic word for roasting, in the case of hummus roasted or fried chickpeas but in the case of this dish onion zest. The name comes from the red onions being sautéd to a caramelized blackened crisp at the bottom of an oiled pot before the addition of the meat and rice. A ḥosayniya or hussainiya (Arabic: حسينية ''husayniyya''), also known as an ashurkhana, imambargah, or imambara, is a congregation hall for Twelver Shia Muslim commemoration ceremonies, especially those associated with the Mourning of Muharram. Hussainiya is a multitude hall for the mourning of Muharram and other commemoration rituals of Shia that its name gets from Husayn ibn Ali, the grandson of Muhammad. The Mourning of Muharram (also known as Azadari, Remembrance of Muharram or Muharram Observances) is a set of commemoration rituals observed primarily by Shia people. Shawwal ( ar, شَوَّال, ') is the tenth month of the lunar based Islamic calendar. ''Shawwāl'' stems from the verb ''shāla'' () which means to 'lift or carry', generally to take or move things from one place to another, Fasting during Shawwāl The first day of Shawwāl is Eid al-Fitr, fasting is prohibited.
