This is a list of notable Mexican restaurants. Mexican cuisine is primarily a fusion of indigenous Mesoamerican cooking with European, especially Spanish, elements added after the Spanish conquest of the Aztec Empire in the 16th century. The basic staples remain native foods such as corn, beans and chili peppers, but the Europeans introduced many other foods, the most important of which were meat from domesticated animals (beef, pork, chicken, goat and sheep), dairy products (especially cheese) and various herbs and many spices. Mexican Cuisine
Mexican cuisine consists of the cooking cuisines and traditions of the modern country of Mexico. Its earliest roots lie in Mesoamerican cuisine. Its ingredients and methods begin with the first agricultural communities such as the Olmec and Maya who domesticated maize, created the standard process of maize nixtamalization, and established their foodways. Successive waves of other Mesoamerican groups brought with them their own cooking methods. These included: the Teotihuacanos, Toltec, Huastec, Zapotec, Mixtec, Otomi, Purépecha, Totonac, Mazatec, Mazahua, and Nahua. With the Mexica formation of the multi-ethnic Triple Alliance (Aztec Empire), culinary foodways became infused (Aztec cuisine). BurritoVille is a New York City-based quick-service food chain serving Tex-Mex cuisine, established in 1992. Until 2008, there were 16 locations in Manhattan, one in Westbury, New York on Long Island, and one in Hoboken, NJ. The menu items consist mostly of various types of burritos and tacos, as well as salads and nachos. Many of the items are vegetarian. The chain's slogan is, "We're Mexcellent!" Interior decor consists of antique maps of Mexico and classic sensational horror and romance Mexican cinema posters. Boca Grande Taqueria is a chain of Mexican restaurants in the Boston, Massachusetts area. Overview Boca Grande's fare includes burritos, quesadilla, tacos and enchiladas. They also provide catering services. The name "Boca Grande" in Spanish literally means "Big Mouth". History Boca Grande was founded in 1986 by Mariko Kamio. The restaurant was modeled on Gordo's Taqueria, a successful San Francisco restaurant owned by Kamio's cousin. Baker's Drive-Thru
Baker's Drive-Thru is a chain of fast-food restaurants located in the Inland Empire region of Southern California. The menu features a selection of items such as hamburgers, french fries, tacos, burritos, quesadillas, and milkshakes. Inspired by the success of McDonald's, Neal Baker founded his first restaurant in 1952, calling it "Baker's Burgers." Three years later, Baker added Mexican food to the menu. Burgers were sold at one window and Mexican food at another; he called this the "Twin Kitchen" concept. After struggling for over 30 years to make Bakers a success, Baker hired Joe Amlani in 1986 to conduct a complete overhaul on the concept and establish their operations as they exist today.
