Jean-Marie Josselin
Jean-Marie Josselin is a renowned chef who was one of the pioneers of Hawaii regional cuisine. He authored ''A Taste of Hawaii''. Early life Josselin was born in Chamonix, France. After an apprenticeship at a local bistro, he decided to move to Paris and train as a chef. He studied at the Lycee Hotelier de Paris and worked at the Montorgueuil until he was approached by an American businessman to work in a restaurant in the United States. Career He began working in St. Louis, Missouri in 1982, then moved from restaurant to restaurant. Josselin moved to Hawaii and began making food that fused the cuisines of Hawaii's many ethnic groups in 1985. In 1990 Josselin opened a restaurant in Kapaa, Kauai. He opened several other restaurants, then suddenly sold all of his restaurants and went on hiatus. Hawaii Regional Cuisine
The cuisine of Hawaii incorporates five distinct styles of food, reflecting the diverse food history of settlement and immigration in the Hawaiian Islands. In the pre-contact period of Ancient Hawaii (300 AD-1778), Polynesian voyagers brought plants and animals to the Islands. As Native Hawaiians settled the area, they fished, raised taro for '' poi'', planted coconuts, sugarcane, sweet potatoes and yams, and cooked meat and fish in earth ovens. After first contact in 1778, European and American cuisine arrived along with missionaries and whalers, who introduced their own foods and built large sugarcane plantations. Christian missionaries brought New England cuisine while whalers introduced salted fish which eventually transformed into the side dish lomilomi salmon. Koloa, Hawaii
Kōloa is an unincorporated community and census-designated place (CDP) in Kauai County, Hawaii, United States. The population was 2,231 at the 2020 census, up from 1,942 at the 2000 census. The first successful sugarcane plantation in the Hawaiian Islands was started here in 1835. It became a part of Grove Farm in 1948. The name ''Kōloa'' is often incorrectly translated as "native duck", which is the correct translation for the similar-looking ''koloa'' (without the macron). Chamonix
Chamonix-Mont-Blanc ( frp, Chamôni), more commonly known as Chamonix, is a commune in the Haute-Savoie department in the Auvergne-Rhône-Alpes region of southeastern France.
