Osazones are a class of carbohydrate derivatives found in organic chemistry formed when reducing sugars are reacted with excess of phenylhydrazine at boiling temperatures. Formation Osazone formation was developed by Emil Fischer, who used the reaction as a test to identify monosaccharides.
