Cheshire cheese is a dense and crumbly cheese produced in the English county of Cheshire, and four neighbouring counties, Denbighshire and Flintshire in Wales and Shropshire and Staffordshire in England. History Cheshire cheese is one of the oldest recorded named cheeses in British history: it is first mentioned, along with a Shropshire cheese, by Thomas Muffet in ''Health's Improvement'' (c. 1580). There is an unsupported myth that Cheshire cheese is referred to in Domesday Book. Cheshire was the most popular type of cheese on the market in the late 18th century. In 1758 the Royal Navy ordered that ships be stocked with Cheshire and Gloucester cheeses. By 1823, Cheshire cheese production was estimated at 10,000 tonnes per year; in around 1870, it was estimated as 12,000 tons per year. International Cheese Awards
The International Cheese Awards is an annual cheese show and competition. Until 2019, it was held at Dorfold Park near Nantwich, England. Held since 1897, the show attracts entries from around the world. In Nantwich, day one of the two-day event was the judging and trade day, attended primarily by industry participants and press, while day two was scheduled to coincide with the Nantwich and South Cheshire Agricultural Show, and attracted about 40,000 visitors to sample the wares and hear the announcements of the winners. The International Cheese Awards is an activity of the Nantwich Agricultural Society, a UK registered charity. In 2021 it was announced the Awards would be moving to the Staffordshire Show Grounds and would no longer be part of the Nantwich Show event. Lucy Appleby
Florence Lucy Appleby MBE (née Walley; 1 February 192024 April 2008), of Hawkstone Abbey Farm, was an English traditional cheesemaker. She created 'Mrs Appleby's Cheshire' which by the time of her death was the last remaining Cheshire cheese to observe the traditions of using unpasteurised milk from the farm herd, being bound in calico cloth and matured on-farm. Lucy went on to co-found the Specialist Cheesemakers Association to defend the use of unpasteurised milk in cheesemaking. Nantwich Museum is a local museum in the town of Nantwich, Cheshire, northwest England, founded in 1980. The museum is housed in the former public library, dating from 1888. Annatto ( or ) is an orange-red condiment and food coloring derived from the seeds of the achiote tree (''Bixa orellana''), native to tropical America.
