Shashlik
Shashlik, or shashlick (russian: шашлык ''shashlyk''), is a dish of skewered and grilled cubes of meat, similar to or synonymous with shish kebab. It is known traditionally by various other names in Iran, the Caucasus, Eastern Europe and Central Asia, and from the 19th century became popular as ''shashlik'' across much of the Russian Empire and nowadays in the Russian Federation and former Soviet republics. Etymology and history The word ''shashlik'' or ''shashlick'' entered English from the Russian ''shashlyk'', of Turkic origin. In Turkic languages, the word ''shish'' means skewer, and ''shishlik'' is literally translated as "skewerable". The word was coined from the crh, "şış" (' spit') by the Zaporozhian Cossacks and entered Russian in the 18th century, from there spreading to English and other European languages. Prior to that, the Russian name for meat cooked on a skewer was ''verchenoye'', from ''vertel'', 'spit'. Shashlik did not reach Moscow until the la ...

Cottage Cheese
Cottage cheese is a curdled milk product with a mild flavor and a creamy, non-homogeneous, soupy texture. It is made from skimmed milk by draining the cheese, as opposed to pressing it to make cheese curd—retaining some of the whey and keeping the curds loose. An important step in the manufacturing process distinguishing cottage cheese from other fresh cheeses is the adding of a "dressing" to the curd grains, usually cream, which is largely responsible for the taste of the product. Cottage cheese is not aged. Cottage cheese can be low in calories compared to other types of cheese, making it popular among dieters and some health devotees, similar to yogurt. It can be used with a wide variety of foods such as yogurt, fruit, toast, granola, in salads, as a dip, and as a replacement for mayonnaise. It is also known as curds and whey. History Origin A popular story on the origin of cheese was taken from Homer's ''Odyssey'', in which the poet describes how the Cyclops Polyph ...

Meat
Meat is animal flesh that is eaten as food. Humans have hunted, farmed, and scavenged animals for meat since prehistoric times. The establishment of settlements in the Neolithic Revolution allowed the domestication of animals such as chickens, sheep, rabbits, pigs, and cattle. This eventually led to their use in meat production on an industrial scale in slaughterhouses. Meat is mainly composed of water, protein, and fat. It is edible raw but is normally eaten after it has been cooked and seasoned or processed in a variety of ways. Unprocessed meat will spoil or rot within hours or days as a result of infection with, and decomposition by, bacteria and fungi. Meat is important to the food industry, economies, and cultures around the world. There are nonetheless people who choose to not eat meat (vegetarians) or any animal products (vegans), for reasons such as taste preferences, ethics, environmental concerns, health concerns or religious dietary rules. Flatbread
A flatbread is a bread made with flour; water, milk, yogurt, or other liquid; and salt, and then thoroughly rolled into flattened dough. Many flatbreads are unleavened, although some are leavened, such as pizza and pita bread. Flatbreads range from below one millimeter to a few centimeters thick so that they can be easily eaten without being sliced. They can be baked in an oven, fried in hot oil, grilled over hot coals, cooked on a hot pan, tava, comal, or metal griddle, and eaten fresh or packaged and frozen for later use. History Flatbreads were amongst the earliest processed foods, and evidence of their production has been found at ancient sites in Mesopotamia, ancient Egypt, and the Indus civilization. In 2018, charred bread crumbs were found at a Natufian site called Shubayqa 1 in Jordan (in Harrat ash Shaam, the Black Desert) dating to 12,400 BC, some 4,000 years before the start of agriculture in the region. Analysis showed that they were probably from flatbread ...

Lezgins
Lezgins or Leks ( lez, Лезгияр, Лекьер. lezgijar) are a Northeast Caucasian ethnic group native predominantly to southern Dagestan, a republic of Russia, and northeastern Azerbaijan. The Lezgin are predominantly Sunni Muslims and speak the Lezgi language. The land of the Lezgins has been subject to multiple invaders throughout history. Its isolated terrain and the strategic value outsiders have placed on the areas settled by Lezgins has contributed much to the Lezgin community ethos and helped shape its national character. Due to constant attacks from the invaders, the Lezgins have developed a national code, ''Lezgiwal''. Lezgin society has traditionally been egalitarian and organized around many autonomous local clans, called ''syhils'' (сихилар). Notable historical Lezgin leaders include Hadji-Dawud (1680 – 1735) and Sheikh Muhammad (1771–1838). Etymology There is a strong theme of representing the nation with its national animal, the eagle, and ...
