Café de Coral Holdings, Ltd. () is a Hong Kong fast-food restaurant group that owns and operates fast-food chains and restaurants, including Café de Coral, Super Super, The Spaghetti House, Oliver's Super Sandwiches, Ah Yee Leng Tong, and others. Founded in 1968, the Café de Coral group opened its first Café de Coral restaurant in the Causeway Bay district of Hong Kong in 1969. Since then, the group has grown to operate over 580 separate outlets across its brands all over the world. It is the largest Chinese fast-food restaurant group in Hong Kong and in the world. Fo Tan () is an area of Sha Tin District, New Territories, Hong Kong. It was developed as a light industrial area, but this activity has declined markedly in recent years. There are residential areas to the east, alongside the MTR line, and in the foothills to the west. Etymology Fo Tan is located around a river, the Fo Tan Nullah. Historically, a beach was revealed when the water receded. The area thus became known as "river beach" (). In Hakka Chinese, Hakka, this was pronounced "Fo Tan". XO sauce is a spicy seafood sauce from Hong Kong with an umami flavour. It is commonly used in southern Chinese regions such as Guangdong. History Developed in the 1980s in Hong Kong for Cantonese cuisine, XO sauce is made of roughly chopped dried seafood, including dried scallops (''conpoy''), fish and shrimp, which are cooked with chilli peppers, onions and garlic.
