Beef Noodles
Beef noodle soup is a noodle soup made of stewed or braised beef, beef broth, vegetables and noodles. It exists in various forms throughout East and Southeast Asia. One of the oldest beef noodle soups is the Lanzhou lamian (兰州拉面) or Lanzhou beef noodle soup which was created by the Hui people of northwest China during the Tang dynasty. There are numerous beef noodle soups available in China with a higher variety in the west than the east. Another common varietal is the red-braised beef noodle soup (紅燒牛肉麵) from Taiwan, which was first created by Sichuanese Kuomintang veterans; it is commonly known as Taiwanese beef noodle soup in English. ''Suancai'' (also called ''suan tsai'' and Chinese sauerkraut; ) is a traditional Chinese pickled Chinese cabbage (napa cabbage) or Chinese mustard, used for a variety of purposes. Suancai is a unique form of paocai, due to the ingredients used and the method of production. Southern Yellow Cattle
The Southern Yellow is a group of cattle breeds distributed in southern China. It is one of the three principal groups within the overall Chinese Yellow cattle population, which includes all indigenous Chinese cattle of both ''Bos taurus'' and ''Bos indicus'' origin, as well as hybrids between the two species; Chinese people traditionally do not distinguish between these. The other two major groupings are the Northern Yellow and the Central Plains Yellow. Lamian
Lamian (simplified Chinese: 拉面; traditional Chinese: 拉麵; pinyin: ''Lāmiàn'') is a type of soft wheat flour Chinese noodle that is particularly common in northern China. Lamian is made by twisting, stretching and folding the dough into strands, using the weight of the dough. The length and thickness of the strands depends on the number of times the dough is folded. This unique method of making noodles originated in China. The ''Songshi Yangsheng Bu'' (), which was written by Song Xu and dates back to 1504, has the earliest description of the method to make lamian.
