According to the ''Deipnosophistae'' of Athenaeus, Apicius is the name of a cook who found a way of packing fresh oysters to send to the emperor Trajan while he was on campaign in Mesopotamia around 115 AD.Suda, ''s. v.'' ὄστρεα The information comes by way of the ''Epitome'' or summary of the ''Deipnosophists'', since the full text of this part of Athenaeus's work does not survive. If the information is correct, this is the third known Roman food specialist who was named Apicius, the earliest being the luxury-loving Apicius of the 1st century BC. Apicius
''Apicius'', also known as ''De re culinaria'' or ''De re coquinaria'' (''On the Subject of Cooking'') is a collection of Roman cookery recipes. It is thought to have been compiled in the fifth century AD. Its language is in many ways closer to Vulgar than to Classical Latin, with later recipes using Vulgar Latin (such as ''ficatum'', ''bullire'') added to earlier recipes using Classical Latin (such as ''iecur'', ''fervere''). The book has been attributed to an otherwise unknown Caelius Apicius, an invention based on the fact that one of the two manuscripts is headed with the words "API CAE" or rather because a few recipes are attributed to Apicius in the text: Patinam Apicianam sic facies (IV, 14) Ofellas Apicianas (VII, 2). The ''Deipnosophistae'' is an early 3rd-century AD Greek work ( grc, Δειπνοσοφισταί, ''Deipnosophistaí'', lit. "The Dinner Sophists/Philosophers/Experts") by the Greek author Athenaeus of Naucratis. It is a long work of literary, historical, and antiquarian references set in Rome at a series of banquets held by the protagonist for an assembly of grammarians, lexicographers, jurists, musicians, and hangers-on. Title The Greek title ''Deipnosophistaí'' () derives from the combination of ' (, "dinner") and ''sophistḗs'' (, "expert, one knowledgeable in the arts of ~"). Athenaeus
Athenaeus of Naucratis (; grc, Ἀθήναιος ὁ Nαυκρατίτης or Nαυκράτιος, ''Athēnaios Naukratitēs'' or ''Naukratios''; la, Athenaeus Naucratita) was a Greek rhetorician and grammarian, flourishing about the end of the 2nd and beginning of the 3rd century AD. The ''Suda'' says only that he lived in the times of Marcus Aurelius, but the contempt with which he speaks of Commodus, who died in 192, shows that he survived that emperor. He was a contemporary of Adrantus. Several of his publications are lost, but the fifteen-volume '' Deipnosophistae'' mostly survives. The ''Suda'' or ''Souda'' (; grc-x-medieval, Σοῦδα, Soûda; la, Suidae Lexicon) is a large 10th-century Byzantine encyclopedia of the ancient Mediterranean world, formerly attributed to an author called Soudas (Σούδας) or Souidas (Σουίδας).
