Carnaroli is an Italian medium-grained rice grown in the Pavia, Novara, and Vercelli provinces of northern Italy. Carnaroli is used for making risotto, differing from the more common arborio rice due to its higher starch content and firmer texture, as well as having a longer grain. Carnaroli rice keeps its shape better than other forms of rice during the slow cooking required for making risotto due to its higher amylose content. It is the most widely used rice in Italian cuisine, and is highly prized.

RisottoRisottoRisotto (, , Italian:; from riso, 'rice') is an Italianrice dish cooked with broth until it reaches a creamy consistency. The broth can be derived from meat, fish or vegetables. It is named after the comune (municipality) of Arborio, in the Po Valley, which is situated in the Piedmont region. When cooked, the rounded grains are firm, creamy and chewy compared to other varieties of rice, due to their higher amylopectin starch content. It has a starchy taste and blends well with other flavours.Province of VercelliProvince of VercelliThe province of Vercelli (Italian: provincia di Vercelli, Piedmontese: Provincia ëd Vërsèj) is a province in the region of Piedmont in northern Italy. Rice is the seed of the grass species Oryza sativa (Asian rice)—or, less commonly, Oryza glaberrima (African rice). Asian rice was domesticated in China some 13,500 to 8,200 years ago; African rice was domesticated independently in West Africa about 3,000 years ago.AmyloseAmyloseAmylose is a polysaccharide made of α-D-glucose units, bonded to each other through α(1→4) glycosidic bonds. Together with amylopectin, it is one of the two components of starch, making up approximately 20–25% of it. Because of its tightly packed helical structure, amylose is more resistant to digestion than other starch molecules and is therefore an important form of resistant starch. StructureAmylose is made up of α(1→4) bound glucose molecules.MaratelliMaratelliMaratelli is a semifinorice native to the comune (municipality) of Asigliano Vercellese, in the province of Vercelli, Italy. Compared to other Japonica varieties, it is early-ripening, it has a good yield and, in the right weather conditions, allows for the early use of fields for other successive cultivation. It is a stable rice genotype, hence maintaining constant culinary and botanical properties over time.Vialone NanoVialone NanoVialone Nano is an Italian semifino (medium-grain) rice variety. It is typical of the flat, rice-growing areas in the south of the province of Verona (Bassa Veronese), in Veneto. Vialone Nano is a cultivar of the Japonica group of varieties of Oryza sativa. Culinary usesSimilar to the Carnaroli, Vialone Nano is an appreciated risotto rice.Rice production in ItalyRice production in ItalyItaly's rice production is the largest in Europe, with a large proportion of the local production being exported. The country produces over 1 million tonnes of rice annually, roughly half of the European Union's production. Rice cultivation was introduced to Italy following the Muslim conquest of Sicily, and later spread to the Po Valley during the fifteenth century with the region still remaining Italy's main production center.Japonica riceJaponica riceJaponica rice (Oryza sativa subsp. japonica), sometimes called sinica rice, is one of the two major domestic types of Asian rice varieties. Japonica rice is extensively cultivated and consumed in East Asia and Italy, whereas in most other regions indica rice is the dominant type of rice. Japonica rice originated from Central China, where it was first domesticated along the Yangtze River basin approximately 9,500 to 6,000 years ago.Arborio, PiedmontArborio, PiedmontArborio is a comune (municipality) in the Province of Vercelli in the Italian region of Piedmont, located about 70 kilometres (43 mi) northeast of Turin and about 20 kilometres (12 mi) north of Vercelli.
