Spanish Cheeses
A wide variety of cheeses are made throughout the country of Spain. Some of the Spanish cheeses are internationally renowned, such as the Manchego cheese, Manchego cheese of La Mancha. Some regions are better known for their cheeses than others; 26 cheeses are classified as Denominación de origen, Protected Designation of Origin (D.O.P.—) and 3 additional cheeses are classified as Protected Geographical Indication (I.G.P. - ''Indicación Geográfica Protegida'') by Spain and the European Union. Many of the cheeses are manufactured from single types of milk (cow, goat or sheep), but a few are mixtures of different milks, and the milk may be raw, pasteurised or creamy. The cheeses are made in a wide variety of styles including fresh, cured, semi-cured and pressed paste, and some are inoculated with mould to make blue varieties. Manchego
Manchego (, ) is a cheese made in the La Mancha region of Spain from the Sheep milk, milk of sheep of the Manchega breed. It is aged between 60 days and 2 years. Manchego has a firm and compact consistency and a buttery texture, often containing small, unevenly distributed air pockets. The colour of the cheese varies from white to ivory-yellow, and the inedible rind from yellow to brownish-beige. The cheese has a distinctive flavour, well developed but not too strong, creamy with a slight piquancy, and leaves an aftertaste that is characteristic of sheep's milk. The designation is protected under Spain's denominación de origen regulatory classification system, and the cheese has been granted Protected Geographical Status, Protected Designation of Origin (PDO) status by the European Union. Cabrales Cheese
Cabrales (Spanish language, Spanish: ''queso de Cabrales'', Asturian language, Asturian: ''quesu Cabrales'') is a blue cheese made in the Artisan cheese, artisan tradition by rural dairy farmers in Asturias, Spain. This cheese can be made from pure, unpasteurized cow’s milk or blended in the traditional manner with goat and/or sheep milk, which lends the cheese a stronger, spicier flavor. Cabrales Blue Cheese
Cabrales is a municipality in the autonomous community of Asturias, Spain. It is situated between the Sierra de Cuera and the Picos de Europa, and is a region famous for its Cabrales cheese. It is divided into nine parishes; Las Arenas is the largest, with a population 767 as of 2023. The population for the municipality as a whole sat at 1,918 as of 2023. Geography Cabrales lies on the border between Asturias and its neighbouring autonomous community Castile and León. It is a highly mountainous region; it contains within it parts of the Sierra de Cuera and Picos de Europa. It is located on the Central Massif of the Cantabrian Mountains.
