Scoville Scale, Scoville Heat Units
The Scoville scale is a measurement of spiciness of chili peppers and other substances, recorded in Scoville heat units (SHU). It is based on the concentration of capsaicinoids, among which capsaicin is the predominant component. The scale is named after its creator, American pharmacist Wilbur Scoville, whose 1912 method is known as the Scoville organoleptic test. The Scoville organoleptic test is a subjective assessment derived from the capsaicinoid sensitivity by people experienced with eating hot chilis. An alternative method, high-performance liquid chromatography (HPLC), can be used to analytically quantify the capsaicinoid content as an indicator of pungency. Amongst growers in the US, the UK, Australia, and France, there has been a competition since the 1990s to grow the hottest chili pepper. Dragon's Breath (chili Pepper)
Dragon's Breath is a chili pepper cultivar that unofficially tested at 2.48 million Scoville units. Development The plant was developed in a collaboration between chili farmer Neal Price, NPK Technology, and Nottingham Trent University during a test of a special plant food and for its essential oil having potential as a skin anesthetic. The Dragon's Breath plant was later cultivated by breeder Mike Smith of St Asaph, Denbighshire, Wales, who said that he had not planned to breed the chili for record heat, but rather was trying to grow an attractive pepper plant. Due to the nationality of the farmer who cultivated the pepper in Wales, it was named Dragon's Breath after the Welsh dragon.
