A powdered egg is a fully dehydrated egg. Most powdered eggs are made using spray drying in the same way that powdered milk is made. The major advantages of powdered eggs over fresh eggs are the reduced weight per volume of whole egg equivalent and the shelf life. Other advantages include smaller usage of storage space, and lack of need for refrigeration. Mile End
Mile End is a district of the London Borough of Tower Hamlets in the East End of London, England, east-northeast of Charing Cross. Situated on the London-to-Colchester road, it was one of the earliest suburbs of London. It became part of the metropolitan area in 1855, and is connected to the London Underground. Freeze drying, also known as lyophilization or cryodesiccation, is a low temperature dehydration process that involves freezing the product and lowering pressure, removing the ice by sublimation. This is in contrast to dehydration by most conventional methods that evaporate water using heat.
