List Of Indian Dishes
This is a list of Indian dishes. Many of the dishes on this list are made all across India. Indian cuisine encompasses a wide variety of regional cuisine native to India. Given the range of diversity in soil type, climate and occupations, these cuisines vary significantly from each other and use locally available ingredients such as: herbs, vegetables and fruits. The dishes are then served according to taste in either mild, medium or hot. Indian food is also heavily influenced by religious and cultural choices, like Hinduism and traditions. Some Indian dishes are common in more than one region of India, with many vegetarian and vegan dishes. Kulcha
Kulcha is a type of mildly leavened flatbread that originated in the Indian subcontinent. Recipe Kulcha is made from maida flour, water, a pinch of salt and a leavening agent (yeast or old kulcha dough), mixed together by hand to make a very tight dough. This dough is covered with a wet cloth and left to stand for an hour or so in a warm place. The result is a slight leavening of the dough but not much. The flour is kneaded again by hand and then rolled out using a rolling pin into a flat, round shape. It is baked in an earthen clay oven ("tandoor") until done. When baked, it is often brushed with butter or ghee, although this is not necessary. It is then eaten with any Indian curry. In particular, a spicy chickpea curry known as ''chole'' is the dish of choice for being eaten with kulcha. Aloo mutter (also spelled ''aloo mattar'' or ''aloo matar'' or ''alu'') is a vegetarian North Indian dish from the Indian subcontinent which is made from potatoes (''Aloo'') and peas (''mattar'') in a mildly spiced creamy tomato based gravy. It is a vegetarian dish. The gravy base is generally cooked with garlic, ginger, onion, tomatoes, cilantro (coriander), cumin seeds, red chilli, turmeric, garam masala, and many other spices. It can also be made without onion or garlic. Aloo mutter is also available commercially in ready-to-eat packets, which need to be heated and served.
