Ernesto Illy
Ernesto Illy (July 18, 1925 – February 3, 2008) was an Italian food chemist and businessman, known as the chairman of the Illycaffè S.p.A. coffee manufacturer. He was deeply and widely respected, and is considered "an absolute giant" in the world of coffee and espresso, He spearheaded Illy's research into coffee and espresso quality, as summarized in his son Andrea's book, ''Espresso: The Chemistry of Quality,'' which was written with Ernesto's assistance. Andrea Illy (born 7 September 1964) is an Italian businessman. He is the Chairman of illycaffè S.p.A., a family coffee business founded in Trieste in 1933. He has additionally been Chairman of Altagamma since 2013. Life and education Illy was born on 2 September 1964 in Trieste, the son of Ernesto Illy. He started his studies in Switzerland and graduated with a degree in Chemistry from the University of Trieste. Riccardo Illy (born 24 September 1955) is an Italian businessman and former politician. Biography Riccardo Illy was born in Trieste, Friuli-Venezia Giulia. His paternal grandfather, Francesco Illy, was of Hungarian origin. He's Waldensian. As a young man Illy worked as a skiing instructor at Piancavallo and a sailing instructor at Monfalcone. He married Rossana Bettini, food and wine journalist, at a young age. They have a daughter Daria who is now a Physical Education teacher and personal trainer. Francesco Illy ( hu, Illy Ferenc (7 October 1892 – 1956) was a Hungarian accountant, bookkeeper, businessman, philanthropist. He founded illy and invented various coffee machinery. Biography Illy was born to a middle-class family in Temesvár, Kingdom of Hungary (now Timișoara, Romania). His father, János Illy, was a carpenter. His mother, Aloisia Rössler, was Danube Swabian. He studied economics in Temesvár. After secondary school, he moved to Vienna, where he worked for two big Transylvanian companies. IperEspresso
IperEspresso is a single-serve capsule system for preparing espresso coffee and espresso-based drinks. It was developed and patented by Illy. IperEspresso capsule encloses a complete extraction group that replaces the traditional process of percolation with a two-stage extraction. In the first stage, ''iper-infusion'', hot water under pressure creates conditions that extract coffee flavor and aroma and increase richness and complexity. In the second stage, emulsification, the iper-infusion is forced through the valve at the bottom of the capsule, mixing the aromatic oils with air to produce cream.
