Comté Cheese
Comté () is a French cheese made from unpasteurized cow's milk in the Franche-Comté region of eastern France bordering Switzerland and sharing much of its cuisine. Comté has the highest production of all French Appellation d'origine contrôlée (AOC) cheeses, at around annually. It is classified as an Alpine cheese. The cheese is made in discs, each between in diameter, and around in height. Each disc weighs up to with a fat in dry matter (FDM) content around 45%. The rind is usually a dusty-brown colour, and the internal paste, pâte, is a pale creamy yellow. The texture is relatively hard and flexible, and the taste is mild and slightly sweet. Conté (; ), also called the Conté stick or Conté crayon, is a drawing medium composed of compressed powdered graphite or charcoal mixed with a clay base, square in cross-section. It was invented in 1795 by Nicolas-Jacques Conté, who created the combination of clay and graphite in response to the shortage of graphite caused by the Napoleonic Wars (when the British naval blockade of France prevented import). Conté crayons had the advantage of being cost-effective to produce, and easy to manufacture in controlled grades of hardness. They are now manufactured using natural pigments (iron oxides, carbon black, titanium dioxide), clay (kaolin), and a binder (cellulose ether).
