Circassian cheese ( , ''adygeyskiy syr''), is a cheese found across the North Caucasus, the Levant and other areas with a Circassian diaspora. The cheese is prepared with raw cow, sheep and/or goats milk (Adyghean cheese - only with cow milk) and molded into a wooden basket. Circassian cheese is a mild type of cheese that does not melt when baked or fried, and can be crumbled. Circassian cheese is often consumed fresh, or after having been dried by the sun or in the oven. There is also a smoked Circassian cheese. There is an annual festival for Circassian cheese in Maykop, the capital of the Republic of Adyghea, Russia, held during the Circassian cultural festival with participants from different regions in the North Caucasus, competing in producing the best types of Circassian cheese. The small Circassian community in Israel, most of whom live in Kfar Kama and Rehaniya in the Upper Galilee, operates boutique dairies that produce traditional Circassian cheese. Circassia
Circassia ( ), also known as Zichia, was a country and a historical region in . It spanned the western coastal portions of the North Caucasus, along the northeastern shore of the Black Sea. Circassia was conquered by the Russian Empire during the Russo-Circassian War (1763–1864), after which approximately 80–97% of the Circassians, Circassian people were either exiled or massacred in the Circassian genocide. In the medieval era, Circassia was nominally ruled by an elected Grand Prince, but individual principalities and tribes were autonomous. Circassian Diaspora
The Circassian diaspora are ethnic Circassians around the world who were driven from Circassia during the late nineteenth and early twentieth century. From 1763 to 1864, the Circassians fought against the Russian Empire in the Russian-Circassian War which ended in a genocide campaign initiated between 1862 and 1864. Large numbers of Circassians were exiled and deported to the Ottoman Empire and nearby regions; others were resettled in Russia far from their homeland. Circassians live in more than fifty countries, besides the Republic of Adygea. Circassian smoked cheese is a smoked low-fat Circassian cheese, especially produced in the eastern Marmara region of Turkey. It is light yellow or cream-colored with a thick crust. Maykop
Maykop is the capital city of Adygea, Russia, located on the right bank of the Belaya River. It borders Maykopsky District, from which it is administratively and municipally independent, to the east and south; Giaginsky District to the north, and Belorechensky District of Krasnodar Krai to the west. Population: History The city gave its name to the early Bronze Age Maykop culture after the discovery of a royal burial site there in 1897.
