. In his first NFL start, he threw for 243 yards, one touchdown, and one interception, nearly pulling off an upset as the Cowboys ultimately lost 24–19. He returned to a backup role the rest of the season behind Dalton. Gilbert was the starter for Dallas in the Hall of Fame game on August 5, 2021. He was released from the Cowboys during final roster cuts on August 31, 2021.

On October 4, Gilbert signed to the Patriots practice squad. On October 15, Gilbert was elevated to the active roster, via a standard elevation which caused him to revert back to the practice squad after the game. His practice squad contract with the team expired after the season on January 8, 2023.
