Whole Wheat Flour
Whole-wheat flour (in the US) or wholemeal flour (in the UK) is a powdery substance, a basic food ingredient, derived by grinding or mashing the whole grain of wheat, also known as the wheatberry. Whole-wheat flour is used in baking of breads and other baked goods, and also typically mixed with lighter "white" unbleached or bleached flours (that have been treated with flour bleaching agent(s)) to restore nutrients (especially fiber, protein, and vitamins), texture, and body to the white flours that can be lost in milling and other processing to the finished baked goods or other food(s). White whole wheat flour In the United States, white whole-wheat flour is flour milled from hard white spring wheat and contains the bran and germ. In the United Kingdom and India whole-wheat flour is more commonly made from white wheat instead of hard winter red wheat, as in the United States See also * Wheat flour * Whole grain * Unifine Mill * Graham bread an early attempt to reintro ...

Mill (grinding)
A mill is a device, often a structure, machine or kitchen appliance, that breaks solid materials into smaller pieces by grinding, crushing, or cutting. Such comminution is an important unit operation in many processes. There are many different types of mills and many types of materials processed in them. Historically mills were powered by hand or by animals (e.g., via a hand crank), working animal (e.g., horse mill), wind ( windmill) or water ( watermill). In modern era, they are usually powered by electricity. The grinding of solid materials occurs through mechanical forces that break up the structure by overcoming the interior bonding forces. After the grinding the state of the solid is changed: the grain size, the grain size disposition and the grain shape. Milling also refers to the process of breaking down, separating, sizing, or classifying aggregate material (e.g. mining ore). For instance rock crushing or grinding to produce uniform aggregate size for construction ...

Roman Meal
Roman Meal Company was an American bread company with headquarters in Fargo, North Dakota. Founded in Tacoma, Washington, in 1912, the company focused on whole-grain products, including bread, hot cereal, and snack bars. History The Roman Meal Company was founded on the principles that Canadian physician Robert Jackson believed to have been the components of the healthful regimen of Roman soldiers, who purportedly consumed two pounds of wheat or rye in their daily rations. Jackson's first product was a hot mixed-grain breakfast cereal called Dr. Jackson's Roman Health Meal. In 1927, Tacoma master baker William Matthaei, whose family had been in the baking business in Germany since 1686, purchased the company. Matthaei added bread to the Roman Meal company product roster, and it continues to be a major focus of the family-owned company. The North American rights to the Roman Meal trademark for bread, buns, rolls were sold to Flowers Foods in early 2015. US-Based Licensees Flower ...

Graham Bread
Graham bread is a name for whole wheat bread that was inspired by the teachings of famous health reformer Sylvester Graham. History Sylvester Graham was a 19th-century health reformer who argued that a vegetarian diet, anchored by bread that was baked at home from flour that was made from whole wheat flour, was part of a healthful lifestyle that could prevent disease. In 1837, Graham published the popular book ''Treatise on Bread and Bread-Making'', which included a history of bread and described how to make Graham bread, though the passage is absent of any exact measurements and instead calls upon the baker's "good judgment." It was reprinted in 2012 by Andrews McMeel Publishing, as a selection of its American Antiquarian Cookbook Collection. Like Graham crackers, Graham bread was high in fiber and made from graham flour free from the chemical additives that were common in white bread at that time such as alum and chlorine. He argued that these chemical additives were un ...

Unifine Mill
A Unifine mill is a single one-pass impact milling system which produces ultrafine-milled whole-grain wheat flour that requires no grain pre-treatment and no screening of the flour. Like the grist or stone mills that had dominated the flour industry for centuries, the bran, germ, and endosperm elements of grain are processed into a nutritious whole wheat flour in one step. Consumers had accepted whole wheat products produced by grist or stone mills. The flour produced by these mills was quite coarse as they included the bran and the germ elements of the grain. As the nutritional value of vitamins, micronutrients, antioxidants, phytonutrients, amino acids, and fiber, were completely or relatively unknown in the late 19th century, removing the bran and the germ with the roller mill, invented at that time, was an attractive idea. With the elimination of the bran and the germ, the resulting "white" flour composed entirely of the endosperm produced an appealing product that research ...

Wheat Flour
Wheat flour is a powder made from the grinding of wheat used for human consumption. Wheat varieties are called "soft" or "weak" if gluten content is low, and are called "hard" or "strong" if they have high gluten content. Hard flour, or ''bread flour'', is high in gluten, with 12% to 14% gluten content, and its dough has elastic toughness that holds its shape well once baked. Soft flour is comparatively low in gluten and thus results in a loaf with a finer, crumbly texture. Soft flour is usually divided into cake flour, which is the lowest in gluten, and pastry flour, which has slightly more gluten than cake flour. In terms of the parts of the grain (the grass fruit) used in flour—the endosperm or protein/starchy part, the germ or protein/fat/vitamin-rich part, and the bran or fiber part—there are three general types of flour. White flour is made from the endosperm only. Brown flour includes some of the grain's germ and bran, while whole grain or ''wholemeal flour'' is mad ...

Red Wheat
Wheat is produced in almost every state in the United States, and is the principal cereal, cereal grain grown in the country. The type and quantity vary between regions. The US is ranked fourth in production volume of wheat, with almost 50 million tons produced in 2020, behind only China, India and Russia. The US is ranked first in crop export volume; almost 50% of its total wheat production is exported. The United States Department of Agriculture defines eight official classes of wheat: durum wheat, hard red spring wheat, hard red winter wheat, soft red winter wheat, hard white wheat, soft white wheat, unclassed wheat, and mixed wheat. Winter wheat accounts for 70 to 80 percent of total production in the US, with the largest amounts produced in Kansas (10.8 million tons) and North Dakota (9.8 million tons). The US hard red spring wheat crop is exported to over 70 countries each year to the extent of 55%. Of the total wheat produced in the country, 50% is exported, valued at US$9 bil ...

Spring Wheat
Winter wheat (usually '' Triticum aestivum'') are strains of wheat that are planted in the autumn to germinate and develop into young plants that remain in the vegetative phase during the winter and resume growth in early spring. Classification into spring wheat versus winter wheat is common and traditionally refers to the season during which the crop is grown. For winter wheat, the physiological stage of heading (when the ear first emerges) is delayed until the plant experiences vernalization, a period of 30 to 60 days of cold winter temperatures (0° to 5 °C; 32–41 °F). Winter wheat is usually planted from September to November (in the Northern Hemisphere) and harvested in the summer or early autumn of the next year. In some places (e.g. Chile) a winter-wheat crop fully 'completes' in a year's time before harvest. Winter wheat usually yields more than spring wheat. So-called "facultative" wheat varieties need shorter periods of vernalization time (15–30 days ...
