Tembleque
Tembleque is a coconut dessert pudding from Puerto Rico. It is one of the most popular desserts in Puerto Rican cuisine. Ingredients is made by cooking coconut cream, coconut milk, heavy cream (optional), salt, cornstarch, sugar, frequently orange blossom water, and garnished with ground cinnamon. Tembleque can also be topped with a relish or syrup usually made with sugar, liqueur, spices, fruit juice or diced, and wine or simply chocolate shavings on top. Cultural importance It is a holiday dish, served on New Year's Day throughout the island of Puerto Rico. While the recipe may have originated in Puerto Rico, there are variants on the dish in Latin America and other countries. In Brazil, the dish is known as manjar branco. Haupia
Haupia is a Cuisine of Hawaii, traditional coconut milk-based Native Hawaiians, Hawaiian dessert often found at luaus and other local gatherings in Hawaii. Since the 1940s, it has become popular as a topping for white cake, especially at weddings. Although technically considered a pudding, the consistency of haupia closely approximates gelatin dessert, and it is usually served in blocks like gelatin. It is also served in local ice cream parlors as Haupia Ice Cream. Coconut Bar
Coconut bar is a refrigerated dim sum dessert found in Hong Kong, Taiwan, Southern China and in overseas Chinatowns. It is sweet and has a soft, gelatin-like texture but is white in color rather than translucent like gelatin. It is sometimes referred to as coconut pudding. Preparation The dessert is made of coconut milk (preferably freshly made) and set with a mixture of tang flour (wheat starch) and corn starch, or a mixture of agar agar and gelatin. It is sweetened, and sometimes sprinkled with desiccated coconuts. The texture varies from silky springy (if gelatin and agar agar is used as setting agent) to creamy in texture (if wheat starch and corn starch are used to set the dessert) depending on individual preparations. ''Bebinca'' or ''bebinka'', (Konkani; ''bibik'') is a layer cake of Indo-Portuguese cuisine in Goa, India. Overview Khanom thuai or Khanom thuai talai (as Referred to in some areas) is a traditional Thai dessert that has a sweet taste in contrast with a salty taste. The uniqueness of this dish is that it is served in small ceramic bowls (hence the name dessert in a small bowl) with a small wooden spoon for taking out the dessert itself. The basic ingredients for making this dish in the modern day consist of rice flour, cane sugar, salt, and coconut milk. Manjar branco is a pure white Brazilian coconut pudding similar to blancmange. It is identical to the Puerto Rican tembleque. In Brazil manjar branco is made in a ring (Savarin) mold and is served with a sauce made of pitted prunes poached in port wine.
