Sisig
''Sisig'' ( ) is a Filipino cuisine, Filipino dish made from parts of a Pork, pig's face and belly, and chicken liver which is usually seasoned with ''calamansi'', onions, and chili peppers. It originates from the Pampanga region in Luzon. ''Sisig'' is a staple of Kapampangan cuisine. Lucia Cunanan
Lucía "Aling Lucing" Lagman Cunanan (27 February 1928 – 16 April 2008) was a Filipino restaurant, restaurateur best known for having invented or at least re-invented sisig, a popular Kapampangan people, Kapampangan dish in the Philippines and Filipino diaspora, Filipino diasporas worldwide. Career Lucia Cunanan was born in Tarlac on 27 February 1928. She settled in Pampanga after her marriage to Victorino F. Cunanan. In 1974, she established ''Aling Lucing's'', a restaurant in Angeles City. Her restaurant offered a reinvented variant of sisig which soon became nationally famous. The popularity of Cunanan's sisig had helped establish Angeles City as the "Sisig Capital of the Philippines", thus her earning the sobriquet "Sisig Queen". Dinakdakan
Dinakdakan, also known as warek-warek, is a Filipino dish consisting of various pork head parts, red onions, siling haba or siling labuyo chilis, ginger, black peppercorns, calamansi juice, and bay leaves. The pork parts are first boiled in the aromatics for an hour or so until tender, and then further grilled until lightly charred. They are chopped into small pieces and served in a creamy sauce traditionally made from mashed cooked pig's brain, though this is commonly substituted with mayonnaise. The pork parts used commonly include pork jowls (''maskara''), pork collar, and ears. Sometimes pork tongue, liver, stomach, and intestines are also included. Dinakdakan is most commonly served as ''pulutan'', appetizers that are eaten with beer or other alcoholic drinks. But it can also be eaten with rice. Kapampangan cuisine ( pam, Lútûng Kapampángan) differed noticeably from that of other groups in the Philippines. The Kapampangan kitchen is the biggest and widely used room in the traditional Kapampangan household. When the Philippines was under Spanish rule, Spanish friars and sailors taught Kapampangans the basics of Spanish cooking. The Kapampangans were able to produce a unique blend that surprised the Spanish palate. ''Kinilaw'' ( or , literally "eaten raw") is a raw seafood dish and preparation method native to the Philippines. It is also referred to as Philippine ceviche due to its similarity to the Latin American dish ceviche.
