Mixing Paddle
A mixing paddle is a shaped device, typically mounted on a shaft, which can be inserted on the shaft end into a motorised drive, for the purpose of mixing liquids, solids or both. Paddle mixers may also be used for kneading. Whilst mounted in fixed blending equipment, the paddle may also be referred to as an agitator. Purpose Mixing paddles are used for mixing ingredients in cooking and for mixing construction products, such as pastes, slurries or paints. They are also used for dispersing solids within liquids (for example, some polymers may be delivered in solid form, but will dissolve in liquids). Kneading
In cooking (and more specifically baking), kneading is a process in the making of bread or dough, used to mix the ingredients and add strength to the final product. Its importance lies in the mixing of flour with water; when these two ingredients are combined and kneaded, the gliadin and glutenin proteins in the flour expand and form strands of gluten, which gives bread its texture. (To aid gluten production, many recipes use bread flour, which is higher in protein than all-purpose flour.) The kneading process warms and stretches these gluten strands, eventually creating a springy and elastic dough. If bread dough is not kneaded enough, it will not be able to hold the tiny pockets of gas (carbon dioxide) created by the leavening agent (such as yeast or baking powder), and will collapse, leaving a heavy and dense loaf. A concrete mixer (often colloquially called a cement mixer) is a device that homogeneously combines cement, aggregate such as sand or gravel, and water to form concrete. A typical concrete mixer uses a revolving drum to mix the components.
