Maker's Mark is a small-batch bourbon whisky produced in Loretto, Kentucky, by Beam Suntory. It is bottled at 90 U.S. proof (45% alcohol by volume) and sold in squarish bottles sealed with red wax. Alcohol proof (usually termed simply "proof" in relation to a beverage) is a measure of the content of ethanol (alcohol) in an alcoholic beverage. The term was originally used in England and was equal to about 1.8 times the percentage of alcohol by volume (ABV). The UK now uses ABV instead of proof. In the United States, alcohol proof is defined as twice the percentage of ABV. The definition of proof in terms of ABV varies from country to country. The measurement of alcohol content and the statement of content on bottles of alcoholic beverages is regulated by law in many countries. In brewing and distilling, mashing is the process of combining a mix of ground grains – typically malted barley with supplementary grains such as corn, sorghum, rye, or wheat – known as the "grain bill" with water and then heating the mixture. Mashing allows the enzymes in the malt (primarily, α-amylase and β-amylase) to break down the starch in the grain into sugars, typically maltose to create a malty liquid called wort. Malting
Malting is the process of steeping, germinating and drying grain to convert it into malt. The malt is mainly used for brewing or whisky making, but can also be used to make malt vinegar or malt extract. Various grains are used for malting, most often barley, sorghum, wheat or rye. Several types of equipment can be used to produce the malt. Traditional floor malting germinates the grains in a thin layer on a solid floor, and the grain is manually raked and turned to keep the grains loose and aerated. In a modern malt house the process is more automated, and the grain is germinated on a floor that is slotted to allow air to be forced through the grain bed. David Steven Pickerell (August 14, 1956 – November 1, 2018) was an American distiller. He was considered the "Johnny Appleseed" or "founding father" of craft distilling. Early life and education Pickerell was born on August 14, 1956, in Fairborn, Ohio. His father, Richard Pickerell, was a postmaster. He attended the United States Military Academy at West Point from 1974 to 1978, where he earned a Bachelor of Science in chemistry. He played on the 1974 Army Cadets football team his freshman year. After graduating, he served 11 years in the United States Army. He received a master's degree in chemical engineering from the University of Louisville while in the army.
