Wensleydale is a style of cheese originally produced in Wensleydale, North Yorkshire, England, but now mostly made in large commercial creameries throughout the United Kingdom. The term "Yorkshire Wensleydale" can only be used for cheese that is made in Wensleydale. Flavour and texture Wensleydale is a medium cheese that is supple and crumbly. It has a slight honey aroma. Common flavour combinations The flavour of Wensleydale is suited to combination with sweeter produce, such as fruit like sweet apples. A popular combination available in many restaurants and delicatessens is cranberry Wensleydale, which contains cranberries in the cheese. Wensleydale is the dale or upper valley of the River Ure on the east side of the Pennines, one of the Yorkshire Dales in North Yorkshire, England. It is one of only a few Yorkshire Dales not currently named after its principal river, but the older name, Yoredale, can still be seen on some maps and as the Yoredale Series of geological strata. Wensleydale Creamery is a cheese manufacturer based in the town of Hawes in North Yorkshire, England. It makes several varieties of cheese, but is most notable as a producer of ''Yorkshire Wensleydale''; a variety of Wensleydale cheese with PGI status. History In 1897 Edward Chapman established a commercial creamery in Hawes using traditional techniques and milk bought from local farms. The creamery was taken over in the 1930s by Kit Calvert who sold it to the Milk Marketing Board in 1966. In May 1992, Dairy Crest, a subsidiary of the Milk Marketing Board, closed the Hawes creamery with the loss of 59 jobs. Dairy Crest transferred production of Wensleydale cheese to Yorkshire's traditional rival, Lancashire. Six months later, in November 1992, following many rescue offers, a management buyout took place, led by local businessman John Gibson and the management team. Hawes
Hawes is a market town and civil parish in the Richmondshire district of North Yorkshire, England, at the head of Wensleydale in the Yorkshire Dales, and historically in the North Riding of Yorkshire. Jervaulx Abbey
Jervaulx Abbey in East Witton, 14 miles north-west of the city of Ripon, was one of the great Cistercian abbeys of Yorkshire, England, dedicated to St Mary in 1156. It is a Grade I listed building. The place name ''Jervaulx'' is first attested in 1145, where it appears as ''Jorvalle''.
