Van Honsebrouck
Van Honsebrouck is a Belgian brewery in Ingelmunster, Belgium. Founded in 1865 as Sint-Jozef Brewery, it was renamed to Brewery Van Honsebrouck in 1953. It is one of two breweries outside of Pajottenland to produce lambic beer. History The location of the brewery's building and the whole village of Ingelmunster were razed in 1695 following hostilities between English, French and Spanish soldiers. The current building dates back to 1736, and has cellars that date back to the Middle Ages. In 1986 the castle was bought by the Van Honsebrouck family. The family have been brewing Ingelmunster beer since 1900. On 17 September 2001 a fire broke out in the castle that completely destroyed the museum-brewery. The brewery is owned and operated by the seventh generation of Van Honsebrouck brewers in Ingelmunster. The current CEO is Xavier Van Honsebrouck, who took control in 2009. The Pajottenland (in English occasionally Payottenland) is a distinct region within the Flemish Brabant province and the south-western part of the Brussels Region of Belgium. Lambic
Lambic () is a type of beer brewed in the Pajottenland region of Belgium southwest of Brussels and in Brussels itself since the 13th century. Types of lambic beers include gueuze, kriek lambic and framboise. Lambic differs from most other beers in that it is fermented through exposure to wild yeasts and bacteria native to the Zenne valley, as opposed to exposure to carefully cultivated strains of brewer's yeast. This process gives the beer its distinctive flavour: dry, vinous, and cidery, often with a tart aftertaste. Etymology This beverage is first mentioned in 1794 as ''allambique''. Tripel
Tripel is a term used by brewers mainly in the Low Countries, some other European countries, and the U.S. to describe a strong pale ale, loosely in the style of ''Westmalle Tripel''. The origin of the term is unknown, though the main theory is that it indicates strength in some way. It was used in 1956 by the Trappist brewery, Westmalle, to rename the strongest beer in their range, though both the term Tripel and the style of beer associated with the name (strong pale ale), were in existence before 1956. Kriek Lambic
Kriek lambic is a style of Belgian beer, made by fermenting lambic with sour Morello cherries. Traditionally " Schaarbeekse krieken" (a rare Belgian Morello variety) from the area around Brussels are used. As the Schaarbeek type cherries have become more difficult to find, some brewers have replaced these (partly or completely) with other varieties of sour cherries, sometimes imported. Gueuze
Gueuze (Dutch ''geuze'', ; French ''gueuze'', ) is a type of lambic, a Belgian beer. It is made by blending young (1-year-old) and old (2- to 3-year-old) lambics, which is bottled for a second fermentation. Because the young lambics are not fully fermented, the blended beer contains fermentable sugars, which allow a second fermentation to occur. Due to its lambic blend, gueuze has a different flavor than traditional ales and lagers. Because of their use of aged hops, lambics lack the characteristic hop aroma or flavor found in most other beers.
