''The Auberge of the Flowering Hearth'' is a non-fiction food book by Roy Andries De Groot. Published in 1973, the book is about the time de Groot spent at an inn called L'Auberge de l'Atre Fleuri in St-Pierre-de-Chartreuse in the Savoy region of France, and about the good meals he ate there. The book addresses the logic of constructing a meal of several dishes so that they harmonize with one another, to the use of primarily local and seasonal ingredients to contribute to this harmony, and also an internal harmony within individual dishes. It is also a snapshot of old-school aperitifs, such as kir, and illustrates how a modest kitchen can produce out world-class food. One of the more notable aspects of the book is that de Groot was blind. Savoy (; frp, Savouè ; french: Savoie ) is a cultural-historical region in the Western Alps. Kir (cocktail)
The Kir is a French cocktail made with a measure of crème de cassis (blackcurrant liqueur) topped up with white wine. In France it is usually drunk as an apéritif before a meal or snack. It was originally made with Bourgogne Aligoté, a white wine of Burgundy, but today various white wines are used throughout France, according to the region and the barkeeper. Many prefer a white Chardonnay-based Burgundy, such as Chablis. It used to be called blanc-cassis, but it is now named after Félix Kir (1876–1968), mayor of Dijon in Burgundy. Kir was a pioneer of the twinning movement in the aftermath of the Second World War, and popularized the drink by offering it at receptions to visiting delegations. Besides treating his international guests well, he was also promoting two economic products of the region. Alice Waters
Alice Louise Waters (born April 28, 1944) is an American chef, restaurateur, and author. In 1971 she opened Chez Panisse, a Berkeley, California restaurant famous for its role in creating the farm-to-table movement and for pioneering California cuisine. Waters has authored the books ''Chez Panisse Cooking'' (with Paul Bertolli), ''The Art of Simple Food I'' and ''II'', and ''40 Years of Chez Panisse''. Her memoir, ''Coming to my Senses: The Making of a Counterculture Cook'' was published in September 2017 and released in paperback in May 2018. Nach Waxman
Nach Waxman (20 October 1936 – 4 August 2021) was the founder of New York bookstore Kitchen Arts & Letters. He studied anthropology at university and spent several years working on a PhD, but then left academia to work in book publishing. After a long career in publishing, in which he worked on several cookbooks as an editor, he moved into cookbook retail. Waxman opened Kitchen Arts & Letters in 1983. At the time it was the only bookstore devoted to cookbooks in New York City. The store became a gathering point for chefs and food writers, and many subsequently cited the store and Waxman himself as having had a major influence on their career.
